    No probs, the recipe is on the Muffin authors site so not breaking any copyright rules, I can't believe how easy muffins are to cook!

    I bought a new deep fat fryer yesterday so today I am going to make doughnuts. Maybe some of them will be custard doughnuts, I haven't decided. Also need to do some bread and perhaps some sesame bagels, now I know how to make them.

    Also at about 10pm last night I had another go at making parkin, this time with the oven thermometer (set to 180º, my oven was actually at 220º, no wonder it burnt) and the second batch has turned out lovely. My cat is desperate for a bit, odd creature that he is :D

    Hehe, no parkin for the cat, it's wrapped up in tinfoil to "mature" for a week as apparently it makes it much stickier and tastier, and I caught him before he could tear his way into the tinfoil!

    I have funny cats, one loves cake, scones, anything like that. The other loves marshmallows!

    My cat's the same,there's very little that she won't try.One of her many nicknames is 'The phantom bread-licker',but she will try anything.
    If I'm eating and she's not,I get the 'outraged feline' look.

    I love parkin,but haven't made any for a while.It was so good that it was impossible to have just one piece.If you can keep it for a while before eating,it is better.

    Anyway,I think I'll make a courgette cake as I have discovered a sad-looking courgette in the fridge.

    Just to report back on the cheesy oat slices. They froze and defrosted fine. I took a piece out the freezer last night and had it today and there didn't seem to be any change in texture or taste.

    125g/4.5oz plain flour
    30g/1oz icing sugar
    170g/60oz butter, chilled and chopped
    1 egg yolk
    125g/4.5oz caster sugar
    4 eggs
    125g/4.5oz ground almonds
    2 drops almond extract
    160g/5.75oz raspberry jam
    25g/1oz flaked almonds

    Preheat the oven to 180C/350F/Gas 4. Lightly grease an 8x12" baking tin and line with baking paper, hanging over 2 long sides.

    Sift the flour and 1 tbsp of the icing sugar into a bowl, add 50g/1.75oz of the butter and rub it in until it resembles breadcrumbs. Add the egg yolk and 2 tbsp cold water and mix with a flat-bladed knife until the mixture comes together in beads. Gather into a ball, cover with cling film and refrigerate for 30 mins.

    Roll the dough out and put into the tin, pressing into the edges. Bake for 10 minutes. Allow to cool.

    Beat the remaining butter and the caster sugar with electric beaters until creamy. Add the eggs and fold in the ground almonds and extract.

    Spread the jam over the pastry base and pour over the filling. Sprinkle with flaked almonds and bake for 30-35 minutes, or until firm. Allow to cool.

    Sift the remaining icing sugar into a bowl and mix in 2 tsp warm water. Drizzle over the slice in a zigzag pattern and leave to set. Cut into squares.

    Makes 15 (allegedly :o:rotfl:!!)

    I didn't use flaked almonds or essence, and used cherry jam instead and it turned out find. The filling was a little eggy and the top was cakey, but it still tasted nice.

    My 10 year old and I have just made a cherry cake (for lunchbox tomorrow apparently...if i dont eat it all tonight!) ;)
    ps....still havnt made the banana muffins yet because those darned healthy kids actually did nick all the 'nanas for school after all! hahaha

    Two bread loves in bread maker - reasonable success. But managed to burn the Denis the Menace cupcake mix that I made! Oh well xxx
    Me, OH, grown DS, (other DS left home) and Mum (coming up 80!). Considering foster parenting. Hints and tips on saving £ always well received. Xx

    March 1st week £80 includes a new dog bed though £63 was food etc for the week.

    productive day today - made a cherry and almond loaf and some banana bread... stored in boxes along with the brack and fairy cakes I made yesterday - ready to treat my uni class tomorrow :)
