I baked an apple pie! no big deal you think? well I dont think I have made one for years......twenty perhaps?
my family are more into savouries - but my neighbour kindly gave me a carrier bag full of cooking apples from her sons tree.
they arent bramleys but definately cookers.
I also remembered an old tip I saw on an american recipe - to mix a couple of teaspoons of cornflour with the sugar for sweetening the apples (I dont stew them first).
worked a treat! the apple pie is lovely and now its cooled the filling is firm and not soaking the bottom layer of pastry. oh, and OH and son have both had some and gone back for more!
just thought i would share this with you all! I rarely bake and am a bit thrilled with myself!

Bought Mary Berry's Baking Bible the other day and it's fabulous. Utter stress free, predictable recipes - so far I've done the sticky gingerbread, lemon drizzle traybake and the bakewell slices. Nom!

I bought it in a fit of rage at How To Be A Domestic Goddess - I couldn't for the life of me get Nigella's flapjack recipe to work, and some of the other recipes are rather too exciting in terms of whether they will work or not.... Move over Nigella!

WOW they sound really nice and I'm going to make them tomorrow afternoon :D Can you please tell me how big a bar of chocolate I need as the recipe doesn't say. I've got a big bar of cheap choc and am tempted to shove the lot in but if I don't need that much it means I can eat the rest...err I mean save it :o

I've got a new oven and can finally cook properly without having to babysit everything... So far I've made a carrot cake, choc muffins, double choc muffins and blueberry muffins :T

Cakes are so nice when the bottoms aren't burnt :D

  • I made Paul Hollywood's scones from the Great British Bake-off yesterday afternoon - and they worked amazingly well!! Recipe is on the BBC website here and today my challenge is to make them again but to include some dried fruit as I want to enter a class for fruited scones at the village show next weekend - the OH will enjoy eating the trial run productions, I'm sure!!

I think the recipe may refer to Asda Smart Price choccie, which if it is similar to Tesco Value, will be 100g. TBH you can put as much or as little as you like- last time I did 50g very fine dark choc with orange oil in (present from hubby lol), and a handful of mixed white and brown chocolate chips! As recipe says you can also add cocoa to make double choc chip ones but not tried that lol! I also thought about adding cranberries into them as well (say substituting some choccie) but not tried that yet (makes mental note to do so!).

  • On that note, Aldi do a very nice dark chocolate with orange and almondy bits in, its one of the Mister Roth collection, and is 99p I am sure, its a heavenly luxury chocolate bar, and I have used it for extra special cookies, and for a chocolate orange dessert, with excellent results. A bit dearer, I know, but worth it.
