I have made a chocolate Victoria sponge cake with rose flavour cream cheese filling, and some vegetable soup (not baked obviously), and have just put some shortbread in the oven.

I'm at home with a whiplash injury but still able to bake as machines made by Kenwood do most of the work for me :D However apparently I am not able to chop - I was cutting some carrots for the soup and I am quite fast with a knife... unfortunately my shoulder went into spasm from the whiplash injury, the knife slipped and made a lovely deep cut in my left thumb which bled and bled and bled. I had no idea a thumb contained that much blood.

I still need to bake another cake for someone's birthday tomorrow but I will be staying well away from the knives till I'm sure I'm on the mend.

Thriftlady - cranberry and white chocolate cookies sounds yum! I have some dried cranberries to use up, that would be a lovely way to use them. What recipe are you using, if you don't mind sharing?
  • I've made some choc chip cookies, baked half and stashed the rest of the dough in the fridge, I'll bake the rest tomorrow so they're nice and warm from the oven.

Does anyone have a good flapjack recipe please? Mine always turn out too crumbly and break up as I try to take them out of the tin. Thanks.

Ouch! That sounds painful - hope you feel better soon, from your whiplash and your cut thumb.

I haven't baked anything today as I'm at work. I know that's not a helpful addition to this thread, but I'm feeling all jealous and left out. Someone send me some cake please!!
Back after a very long break!

Trying to clear the freezer - just eaten Rhubarb Crumble & Custard . Also made blackberry & apple pie with fruit from the freezer and pastry mix which had also been frozen only needed water adding to it.

Yesterday my little one helped me make fairy cakes for his brother's class cake stall. We gave them jammy centres,my sons were very reluctant to see them go this morning.:D

Does anyone buy Olive magazine? My subscription copy popped through the door today (the subscription was a freebie!) and it's got a lovely little free booklet of 25 Cakes, Bakes and Puddings. There are some really gorgeous recipes in there including a baked ginger cheesecake and some coconut cupcakes which I think I'll try out this weekend.
