  • I baked a raisin and cherry 7" cake, very loosely based on a 'golden harvest' cake recipe in the women's institute book of cakes.
    Very quick and simple, especially as I'm now fairly familiar with the recipe.
    Gave some to DS2 when he visited today and the rest will be for the two of us over the next few days. I look forward to enjoying a large slice when I take my break in work tomorrow

    I've done a Gingerbread Cake and Lemon Drizzle Cake - waiting for the Gingerbread Cake to cool down enough to try now. OH is prowling around, sniffing the air and dropping hints about 'Is it time for a cuppa?' - love making him suffer ;).

    Would you be able to post your gingerbread cake recipe please? I keep wanting to make it, but there's so many different recipes to try I can never choose!


    I can actually post on here today as have just made a broccoli and red pepper quiche which has gone in the oven with some jam tarts to use up the pastry, some cheesy corn muffalettas and loads of potato wedges to stick in the freezer.

    I will be having a slice of quiche and some wedges for my dinner when cooked :D

    I've also made ginger cake for the first time today. We are all waiting for it to cool as well lol. The house smells lovely. DS has just eaten a very warm piece (while I was upstairs!) but says its lovely. This is the recipe I used

    Ingredients
    • 175 g butter
    • 175 g soft brown sugar
    • 175 g golden syrup
    • 200 ml milk
    • 2 eggs, whisked
    • 325 g self-raising flour
    • 2 tsp ground ginger
    • 1½ tsp bicarbonate of soda
    Method
    1. Heat oven to Gas 2, 150°C, 300°F. Butter and line a 1kg (2lb) loaf tin with baking paper.
    2. Melt butter, sugar and syrup in a pan on a low heat, mix so that the sugar has melted into the butter and syrup. remove from the heat, add the milk and blend until smooth, add the eggs and mix in. Finally fold in the flour, ginger and bicarbonate of soda, pour into the prepared loaf tin.
    3. Bake for 1 hour, then cover with baking paper and bake for another 30 minutes. To check that the cake is cooked insert a knife into the middle and it should come out clean.
    4. Remove cake from the oven and leave for 5 minutes, then turn out of the baking tin and cool. If possible, wrap cake in greaseproof paper and leave it in a tin to enrich for a week as it improves with age.

    coffee and walnut cake from Marks and sparks book I recently got. It wasnt coffee-ey enough but it was GORGEOUS! Time for another bit soon :D

    I just made some blueberry muffins from Nigella's How to be a Domestic Goddess. Trying to make myself wait for them to cool a bit before munching but it's so hard... I got a real craving for blueberries earlier.

    Today it was two dozen cupcakes topped with butter icing...yum!

    Have some butter icing leftover - does anyone know it this will freeze?

    Oh and a baked maple cheesecake - first time I tried making cheesecake and very pleased with result!
    Decluttering, home-making and 'proper' cooking are my priorities this year and trying to finish all those unfinished hobby projects before spending any more money!
