I have a chicken in the oven so am going to take advantage of the spare shelves. i've hobnobs ready to go in and I'm roasting peppers, toms and courgettes for a cous cous salad tomorrow for lunch.
i might also roast a few nuts for snacks. I've got some left over and they'll go soft if I don't use them.£2019 in 2019 #44 - 864.06/20190 -
Cucumber pickle recipe for Furndire and anyone else
2 large cucumbers -slice into 1/4 inch slices
1 green pepper- slice finely
1onion.-slice finely into rings
place all together in a mixing bowl,sprinkle on 4 tablespoons salt.mix well
leave overnight to extract juice.
next day drain,wash in plenty of cold water to remove saltiness. Drain and dry well
in a saucepan heat 3/4 pt cider vinegar [or distilled white vinegar i sometimes use]
8oz granulated sugar,2 tablespoons mustard seeds and a teaspoon of dried ground ginger, OR some dill weed sprigs.
when sugar is dissolved bring to a simmer and add veg
simmer for a few mins,about3 to 5mins,until veg is tender. remove from heat to cool ,pack into warmed jars and seal with a vinegar proof lid .leave at least 2 weeks before eating.
