    There is an absolute vat of quorn sausage casserole, made up from two and a half packets of sausages, frozen mushrooms, shallots and Loyd Grossman casserole mix (courtesy of Approved Foods). I intend to freeze it into about ten portions for when I'm back at work.

    Today I had a bit of a baking head on so have made scones, a chocolate sponge traybake, some cinnamon buns and a chicken,bacon and mushroom risotto think i'll have a little lie down now lol.

    I have a lot of plums and have found a Jane Grigson recipe for a streusel cake with cranberries in her Fruit Book, so have cut up the same weight of plums as she had cranberries and it's smelling delicious in oven. If it's nice am I allowed to copy out the recipe ? I doubt if there's a link to the book.

    Today I have baked a HUGE chicken and got .....

    6 portions all bagged up for DS's meals .. all ready to be frozen

    2 portions in the fridge for lunch tomorrow and Tuesday.

    2 big portions for chicken supreme bagged ready to be frozen

    3 chicken & mushroom pies for the freezer

    Well chuffed with the above.. the chicken was only £5 from Sainsburys

    I have also made some strawberry Jam, and a white basic loaf using my breadmaker my DH bought for me on friday.. Must say they have both turned out rather well.. :)

    Just got to go and prepare Sausage casserole for tea and make a chocolate cake which I promised my DS we would make..... x

    I have made a courgette and walnut loaf cake using a marrow that was given to me by MIL. Haven't made it before, but love carrot cake, and wanted to try something different. Used a recipe off MSE - will try to find the link in a minute. I replaced the pecans with walnuts as already had those in, and the sultanas were replaced with raisins as also had those in.
    Enjoy the little things, for one day you may look back and realize they were the big things.

    Picked up a HUGE bag of bananas on special offer for £1 yesterday so today I made a tray of Banana & Chocolate chip cake.

    Very easy to do and just:

    Butter/Marg
    Brown sugar
    Eggs
    SR flour
    + Bananas & Chocolate

    (will post recipe if wanted)

    I baked spiced carrot cake and made 2 pasies from some mince I had left from earlier in the week, Just added some diced potato and carrot, shortcrust pastry, supper for two with potato, green beans and cauliflower......made extra gravy.....scrummy....we had slice of the carrot cake with our afternoon cuppa.
    Was 13st 8 lbs,Now 12st 11 Lost 10 1/4lbs since I started on my diet.

    made a carrot cake , my cream cheese icing was a bit runny , but tastes delish!
    also made a spicy butternut squash and sweet potato soup...
    £17,000 credit card debt :mad: balances transferred to 0% and ready to start paying them off like mad
