A polenta and ricotta cake with pecan nuts and dates,it's a Delia Smith recipe and it's yummy!
I was intrigued by the polenta and ricotta. It also is an eggless cake-the first I've tried.I'll certainly be making it again.0 -
I've got a choc fudge sponge cake baking as I type. The plan is to cut it in half and stuff it with fresh cream, yum.0

Yesterday I made an apple loaf cake from my Hummingbird Cafe cookbook, it was sooo nice it's all gone apart from one slice for my DS1 when he gets home. so I made another one today, but it didn't come out of the tin quite as well
. I've also got a banana loaf in the oven (it makes a change from the banana cake I normally make

Because I am on WW - I have made six swiss rolls today (You get 8 slices at 2 -2½points each depending on what you use as filling)
I made :
2 chocolate swiss rolls filled with Black Cherry Jam ( Had one for dessert with a small squirt of cream it was scrummy) The second I have sliced and put into individual bags and popped them in the freezer for when I fancy a treat and great for the kids lunchboxes too
2 filled with jam, again sliced and frozen
1 lemon flavoured one filled with lemon curd
1 Orange flavoured one filled with ww orange dessert mix
This really helps to keep me on the straight and narrow while I am on the dietBlessed are the cracked for they are the ones that let in the light

Hmm, made my choc cake and opened the cream ready for whipping, only it turns out it had been filled with clotted cream and not double cream. I've slapped it on anyway so it doesn't get wasted. Just as well I love clotted cream really, lol.0

Coconut jam biscuits.
Favourite easy recipe (after Twink's Hob Nobs of course), make them quite often but have to take lots in to work or else we'd all just keep eating until they're gone :rotfl:
Might start using Nutella instead of jam, possible substitute for Bountys......:j0 -
Scones, fairy cakes and a never-ending, disgracefully sticky vegan chocolate pudding that so far has fed eight people .... I took some round to my neighbours along with some soya cream because I just couldn't face any more lol!
I expect to struggle to get into my clothes tomorrow morning :rotfl:Aspire not to have more but to be more.
