    Wholemeal pasta with roasted vegetable sauce, parmesan cheese and a side salad.

    The sauce was made with 2 peppers, 2 vine tomatoes, 1/2 red onion and 3 chillies that had seen better days and in the past would probably have ended up in the bin! Instead I roasted them and added to a batch of HM pasta sauce and blended until smooth, absolutely delish :)
  • We had:

    OH - leeks baked into pork mince (Danish recipe) with potatoes, carrots and cauliflower. All provided and cooked by my mum, so free!

    Me - reduced falafel bites, reduced hummus served next to bulgur wheat pilaf with cashews and onions.

    We had potato and cabbage soup with bacon. May not sound very appealing but tastes lovely.

    Used various veg from the fridge, 1/2 pack of diced bacon, and ham stock from the freezer. Cheap and nutritious!

    HM chilli for the fourth night in a row. Reckon it was about 60p a portion.

    There's one more portion in the fridge but despite the moneysaving factor I think I'll turn into a chill con carne!!

    I made Prawn & Chicken Curry with HM oven chips - basically it was free! Chicken was left over and from the freezer, prawns were frozen left over from xmas day and the curry sauce was made from paste left in the fridge....I actually felt quite smug!

    Sweetcorn, celery, cherry tomato and avocado salad. Not my first choice but a quick way of shedding a few pounds in a hurry and much better than going hungry.

    Stew made from the stock and meat from the Christmas turkey carcass which I had stored in the freezer plus mushrooms, carrots,parsnip, swede,onion,potato,shredded white cabbage all of which were lurking in the bottom of the fridge. Made some dumplings to go on top.
    Mortgage and Debt free but need to increase savings pot. :think:

    I am so hungry, we have not eaten yet and all of those sound delicious and so very inventive. Paella will have to feature somewhere in our menu this week after reading that.

    We are having grilled chicken breasts with hm healthy wedges, a large bottom of the fridge salad and lashings of Nando's chilli sauce. Just waiting for OH to get in.

    We had potato and leek soup, so thick it was more like stew. It had chicken stock from yesterdays roast chicken and some of the chicken scraps too, and was made using leeks and potatoes from the allotment. Had that with HM bread and then rice pudding for afters which is cheap at the best of times.

    I'm going to make paella with the rest of the chicken tomorrow.
