Starting to get back 'in the groove' concerning meals. It seems to take forever to get out of the holiday mood food wise here :-( Sunday's menu is a holdover from last week, we didn't have the planned meal on Fri so it has been moved along. This week I've included (finally!) what's available for Teas, there is no set plan or order for them, choose which we'd like on the day keeping in mind things that need to be used up first.

SUN- Lamb Chops / Veg / HM Roll (For BH) - (possibly HM) Cheeseburger & Chips for me as I don't do lamb.

MON- HM BBQ Chicken Wings / HM Herbed Basmati Rice / Veg

TUE- Grilled Sausage / HM Mustard Mash / Onion Gravy / Veg

WED- Battered Haddock (oven) / Chips / Mushy Peas

THU- HM Beef (from oxtail) & Egg Noodles / Veg / HM Roll

FRI- JamieO's Crunchy Garlic Chicken / Potato Croquettes / Veg

SAT- Pork 'slices' / HM Stuffing / Veg / Gravy (for BH)

Teas are any of the above L/O's - Tuna & Sweetcorn Sarnies - Bacon Rolls - Salady Bits - Soups - Cheese or PB on Toast, and there are a few 'crunchies' and fruit for snacks. Our main meals (Dinner) are at 'lunchtime' with Tea (lighter lunch type meal) somewhere between 5 & 7. Much later than that and I have problems the rest of the evening :-O

Part of the Furniture Combo Breaker I've been Money Tipped!
Thanks for starting this thread, SunnyGirl - it's my favourite thread and I start suffering deprivation symptoms if it doesn't appear! :o

    This week I've got:

Friday - takeaway pizza, cos I'm sick of living off the contents of my store cupboards (with apologies and best wishes to everyone still trapped by the weather)
Saturday - grocery delivery day! :j Daube of pork with roast parsnips, followed by my nan's Christmas pudding (which she gave me over Christmas) with ice cream
Sunday - leftover pork with lentil and veg stew
Monday - pork and veg noodles with Thai-style sauce
Tuesday - Boodle's rogan puffs, served with dhal
Wednesday - aubergine and red pesto pasta bake
Thursday - possibly back to evening classes, if the teacher has managed to get back to the country; if so it will be something from the freezer, if not beef stroganoff with chips and some sort of green veg

Breakfast will (as always) be cereal or porridge with fruit; lunches will be sandwiches, HM lentil soup or, from Tuesday, a rogan puff. :)

    What's everyone else having?
Back after a very long break!

    Here's the Champys household plan:

Friday - mushroom ragout on tomato macaroni
    Saturday - cantonese rice
Sunday - fake canneloni (stuffed crepes) au gratin
Monday - potato & wild mushroom stew
    Tuesday - pork fillet à l'orange
Wednesday - pumpkin, spinach & goat's cheese pie
Thursday - Indonesian chicken with coconut vegetables
Friday - fish (I've bought it, not sure yet how I will prepare. DH loves fishcakes)
Saturday - chicken/mushroom quiche (leftover chicken from Thurs)

I'm a day short, but we are planning to go out for dinner one evening, so the rest will just move up. As for vegetables, I have a huge oak leaf lettuce, half a celeriac and a lot of carrots. Plus pumpkin still in the barn, and some of last summer's harvest in the freezer - the price of veg in the supermarket was just outrageous today! Now that the garden is defrosting, I might still find some sprouts and there should be turnips, too.
    Enjoy your week!

Sure, although I will say it is my least favourite nut loaf but still quite nice & like you I used up a bag of peanuts. Mine were roasted and salted and I suspect they are meant to be neither but I just put them in a sieve, rinsed off the salt and let them dry. Seemed to work OK. Also used white breadcrumbs instead of wm. The recipe is from a 70s book The Sainsbury Book of Vegetarian Cooking.

    3tps oil
    1 onion, chopped
    2 celery sticks, chopped
    2 cloves garlic, crushed
    8 oz peanuts, ground
    4 oz wholewheat breadcrumbs
8 oz potato, boiled & mashed
    1 egg, beaten
1 tbsp soy sauce (shoyu if you have it)
    1 tbsp tom.puree
    2 tbsp chopped parsley
    salt and pepper
    8 oz mushrooms sliced

Heat oil in pan, add onion, celery, garlic and fry gently until softened. Mix peanuts and breadcrumbs in a bowl, add fried veggies, potato, egg, soy, puree, seasoning to taste and mix thoroughly.

Heat remaining oil and fry mushrooms for 2 minutes stirring.

Grease a 1lb loaf tin and press in half nut mixture. cover with mushrooms, then rest of nut mix on top.

Cover with foil and bake in a preheated oven 180C, 350F, Mk4 for about 1 hour.

Leave in tin for 5 minutes then turn out onto a warmed serving dish. Garnish with coriander (if you have any) and serve with a sharp mushroom sauce. (I though it tasted better with a slightly sweet spicy sauce like sweet chilli dressing)
  • Hi All and thans to Sunnygirl for starting the thread.

    This week we have had/having:

Thurs: Chicken & Rice (Economy Gastronomy Recipe)
Fri: Tuna Steaks with Veg Tagine & Cous Cous
Sat: Sausage Meatballs (sausages with garlic mmmm), HM Tomato Sauce & Pasta
    Sun: Eat at OH's Parents
Mon: Turkey Steaks with Veg, Rice & Citrus Sauce
Tues: Smoked Haddock Fishcakes (New Recipe of the Week)

Still using up bits from freezer and store cupboard - shopping bill shouldn't be too big this month (more for the wedding fund!).
