  • Yesterday for dinner I planned to have the reduced to 33p Ken Hom chinese meal I bought from tesco, but it didnt defrost in time.So instead I had a big bowl of the lovely chicken, veg and rice soup hubby made using the stock of the carcus from a roast.
    Chinese tonight instead.
Will have more of the soup for lunch and hubby has been taking it in to work for lunch for the last 2 days too.

  • I don't normally stick to meal planning but for the next few months the budget is going to be really tight in our house so Im hoping by menu planning etc and using up what I already have in the freezer/cupboards, I will be able to stay on the straight and narrow and avoid supermarkets all together.

Was on the plan to have leftover stew from sunday, but OH and DS had massive portions and seconds on sunday (OH is 6ft 4 and DS is nearly 11 and growing so not unexpected really lol). Ended up having a cheat tea from the freezer, some oven chips (on offer before christmas at £1 a bag was about a 1/2 bag) and chicken nuggets, plus a tin of sweetcorn. Probably about £3.00 all in for all 5 of us, so not too bad.

Using some chicken from the freezer tonight (from last weeks roast) and some wraps I got on offer from before christmas. Will make a sort of spicy tom/veg sauce to put the chicken in and serve with the wraps, grated cheese (in the fridge already), and sour cream. May do some HM potato wedges as well if the kids are V. hungry.

Rest of the week is based around the gammon joint currently in the freezer, will do it in the slow cooker with veggies to get nice stock.
One meal will be hot slice with mash, veg and gravy, second meal will be gammon egg and chips (kids usually have beans as well). The rest will be "pea and ham soup al la my gran" which will do friday teaand sat lunch , sat tea at in laws so free and then we start again lol.

I had pork and veg noodles in Thai-style sauce - the pork was the last bit of the joint I had on Saturday, the veggies were from my veg box, the noodles were in the cupboard anyway, and the sauce was made with a blob of paste from a jar and the last of a block of coconut cream from the back of the cupboard (with a BB date of April 2009 :o. I only spotted that after it had gone into the sauce, but luckily it was fine!).

I finished it off with the juice of half a lemon that had been sitting in the fridge for a week (it got buried and I'd forgotten about it).

I didn't have to buy anything special to make it (unless you count the veg box veggies), and it used up various leftovers, so I reckon it was pretty much a free meal. :)
Back after a very long break!

    Pasta (about 1/3rd of a bag - 20p)
    Garlic (homegrown)
Tenderstem Broccoli (half pack - 90p)
Anchovies (3 or 4 out of a jar, erm I guess about 20p)
    Bacon lardons (£1.69)

£2.99 for two - we usually make this without the bacon but OH was extra hungry! Normally use cheaper broccoli too but this was leftover from a 'nice' meal on Thursday.

Followed by Gu chocolate mousse reduced to 49p for two :D

Tonight's meal will be HM lasagne (made several trays for a Christmas party but had one over and portioned it up) with green beans/peas (from freezer, sauteed with garlic and mushroom) and maybe some baby beetroot (jars reduced at Christmas).
  • Oooo this threadhas made me very hungry ! Last night we had omelette with Co-op Smart Price Free range eggs quite a bit past their best before date but totally fine, in the omelette I grated some cheese left from Xmas, 6 cherry tomatoes that had been in the fridge ages and an onion. Served with a tin of beans that were on offer and Lidls chips at 60p per bag. DD had pasta with sauce from the M & S pasta /sauce/bread offer and various veggies that were sitting around in the fridge witha little of the grated cheese on top that I used for the omelette.

Tonight we will be having a curry using the leftover chicken from Sunday's roast.
  • Last night we had the left-over roast lamb from Sunday in a kind of hot-pot thing which wasn't a total success, as DS said it was disgusting and wouldn't eat any of it despite my continuous coaching & moaning and DD only reluctantly eat a little! OH & me eat it though and tonight OH & me are having the last of the left over lamb in a risotto, which i hope will be ok, although I have never made a rosotto before.
