Then roast it in a baking tin lined with foil for approx 25 mins per pound. Baste it frequently by pouring the juices from the baking tin back over the top of the chicken.
Make sure you rub it with butter and coat it with salt, pepper and ground paprika to crisp up the skin.I love the person I loved.0 -

OP said it was already cooked.
Pick the meat off and freeze it for use in pies, stir-fries, pasta etc. Make sandwich fillings with the breast meat. Boil the bones for stock.

A cooked chicken should keep in the fridge for a week if the temperature is set low enough, so I don't think there's any rush to use it up immediately.
Cold chicken sandwiches. Chicken and leek pie. Chicken and bacon pie. Chicken casserole. Chicken curry. Chicken stir-fry. Oh, the possible list is almost endless. And then you've got the stripped carcass and skin to make lovely stock for either gravy or a base for soup.0 -

I use a basic shortcrust - 300g plain flour, rub in 75g butter and 75g lard. Add cold water and knead lightly until incorporated and smooth. Chill in the fridge for 30 mins then roll out. This makes four 20cm pasties:rudolf: Sheep, pigs, hens and bees on our Teesdale smallholding :rudolf:0 -

I've done this many times. I also have chunks of cooked chicken in the freezer waiting to be turned into a pie when I next fancy one.0

so do you take the cooked frozen chicken out and just put it straight in the pie or do you defrost it first???0

I would normally defrost it, simply because it would otherwise take longer to heat through than everything else which would be fresh.0 -
I normally cook a chicken or other meat on Sunday morning for a roast dinnner - leftovers are then recycled into curry Monday, and whats leftover I normally freeze until I have enough to make another curry or a chicken and mushroom pie - with the best will in the world I CANNOT stretch one chicken to four or five meals - my OH would freak if he didnt have at least ONE leg and a couple of slices of breast meat with his roast dinner! I dont care and have a token slice on my plate - but I do love my chicken curry!
and I defrost the meat from the freezer - othewise it takes ages to warm through and if making pie - the pastry burns!0
