Hope this is the right place to ask this (apologies if it's not)
I'm quite new to cooking enough to have leftovers and using them up the next day so this may sound a dim question. I made a chicken casserole yesterday, put leftovers in the fridge, hubs forgot to take it for his lunch today so would it still be ok for him to take for his lunch tomorrow or not?

yes - up to three days. if you think he may not want it - then its ok to freeze it! you can defrost in fridge overnight or nuke it from frozen - as long as its 'piping hot' before its eaten it will be ok!
dont worry about leftovers I often deliberately make too much! curry leftovers are SOOOO much better than fresh made and too many boiled potatoes are just meal possibilities..........0 -

It will be fine providing it was cooled quite quickly and has been stored in the fridge.

I roasted a chicken for dinner on Sunday, put the cooled carcass in a tupperware box and into the fridge on Sunday night.
Will it still be okay to boil up tonight to make a stock?

Unless it smells funny or has green bits, I would certainly use it. I tend to work on about three days for meat leftovers, I don't know what the official guidelines are though.0
