It'll be fine. We'll probably be eating the leftover Sunday roast chicken for dinner tonight.

If you ever don't have time to make stock or soup, you can always put the carcass in the freezer.

Yes, I would use it 3 or maybe 4 days later as long as doesn't smell bad.

    Hi all

I have so much roast chicken left over from my Sunday roast

Also 2 bags of 750g fresh mix veg.

Could I use it all to make a soup? If so how?

Or would you bin the chicken?

It was cooked on Sunday cooled then in fridge since

    Thanks all! Xx

I would use the chicken, I would boil the veg with stock and strip the meat off the chicken and add. You could puree at any stage if you have a stick blender but i would leave it chunky.

it should be fine - as a rule of thumb I assume that three days and the cooked meat (if well chilled) will be perfectly edible - four days and I use the eyes, nose and tongue test! five days - very iffy and I would bin it. I usually have an idea of what to do with leftovers within a day or two - If nothing planned then I will strip the carcase and put the meat in the freezer until wanted. That doesnt always go to plan BTW! and I have sometimes 'forgotten' meat!
