    Made brown sugar pulled chicken yesterday in the slow cooker. Was a recipe posted on one of the threads - was very nice and we're eating the leftovers in rolls for lunch tomorrow.

    I put a Low GI Pea and Ham Soup in last night. It takes 12-14 hours on high to get the peas just right. But the flavour makes it worth while.

    It'll be lunch for today, and loads of freezer portions :)

    Split peas, red lentils, carrots, onion, frozen peas, vegetable stock and cooking bacon.
    We spend money we don't have, on things that we don't need, to impress people we don't like. I don't and I'm happy!

    Chicken and chorizo Cajun stew :)

    One onion (chopped)
    Two sliced cloves of garlic
    1 stick of celery, chopped
    1 tbsp Cajun seasoning
    1 green pepper, chopped (usually red but I need to use up green)
    half a chorizo, sliced (about 120g)
    2 chicken breasts
    1 chicken stock cube
    1 tin plum tomatoes
    enough water to cover

    Will cook on medium in my SC for 8 hours. Will serve over leftover cous cous with a scattering of green jarred olives (just because I need to use them up!)
  • Chicken curry

    4 chicken breasts chopped into chunks
    Tin of chopped tomatoes
    1/2 jar of pataks curry paste
    1 tin coconut milk
    1 large chopped onion

    Veggie lasagna.
    Onions, finely grated carrot, sweetcorn, sliced aubergine and courgette, jar pasta sauce, and lots of white sauce and cheese. Going to wait for it to cool a little before slicing so it holds its structure more.

    Did you use sliced aubergine and courgette instead of the pasta sheets? Let me know how it turns out!

    I used pasta sheets as well as the sliced veg :D, a good thing too because the aubergine went really soft and mushy, so it would have all mixed in if there wasn't pasta in lasagna as well. It was very yummy though.

    I'm doing something similar today but with red & yellow peppers as well as green (left over from a tuna risotto last night), chicken thighs instead of breast, missing out the celery but adding mushrooms.
    OK, so maybe it's not that similar. :rotfl:

    Imho, adding chorizo (I add it towards the end of cooking) really lifts the taste.

    BBQ pulled pork using some AF bbq sauce which turned out to be in date tesco finests! Smells delicious and has made 3 portions to go in the freezer.
