    chilli is amazing in the slow cooker using cheap cuts of beef which DS prefers or mince:T

    I am just getting to grips with how to cook in it properly, I was thinking of doing a shoulder of pork in there to make pulled pork but am not sure whether to add liquid or not does anyone know.

    It is a large slowcooker with a ceramic crock if that makes any difference.

    i usually top mine up with liquid just enough to cover but someone will be along soon to advise you better x:T

    That sounds lovely - could you put the recipe on please please please!

    I can't really post it as it's from a book (this is the book, it's quite good) but it's almost identical to this one. I use chicken thighs instead of a jointed chicken, and stir in the cream at the very end.

    I'm just about to put some beef mince, carrots, onions and turnip (not swede) in with a can of Campbell's condensed oxtail soup, stock, fresh parsley and worcester sauce.

    It's called Country Mince Casserole from a very old Sainsbury's recipe book and also has dumplings to go in later.

    A whole chicken, rubbed with butter, and seasoned with seasalt, chilli flakes, paprika, spice, black pepper, rosemary, thyme, and lemon juice, with a head of garlic, and a whole onion stuffed into cavity, with a glass of wine poured over.

    Will cook for 4/5 hours on low on a bed of Chantenay carrots, and new potatoes, before transferring chicken, and veg to oven to finish roasting, and crisp for 1/2 hour or so (veg might need less).

    To be served with steamed cabbages and leeks, yorkies, stuffing balls, and bread sauce.

  • A chicken casserole today, with a whole pack of thighs and drummers (10 for £2 yesterday in MrT!), will portion up and freeze to make my life easier during the week.
    Yesterday I made a HUGE chilli, we ate about 1/3 and the rest is frozen in batches. My week is so hectic, it pays to get ahead now (I also did a batch of pasta sauce, flapjacks and a loaf of bread - although not in the S/C!).

    I didn't cover it, any time I've completely covered meat I've found it to be a bit tough. Just marinated it overnight in a bbq style marinade, put it on a bed of onions and put a couple of tablespoons of the marinade into the onions to flavour them. Then I basted the pork, and cooked on low for 8 hours. Basted it again half way through, and I think I might have basted it again with an hour to go.

    Spicy carrot, and lentil soup using yesterdays hm stock, with spices, ginger, onion, and garlic (2/3 days worth). I've still got enough meat, and leftover veg, etc for another dinner tonight, just need more bread sauce, :D and maybe a curry another night. Glad I dusted my SC off. :T
