Hi, I'm new on here but have been lurking for a while and you've all been very inspiring! My ds (18) bought me a slow cooker for christmas and so far I've made spag bol, chicken curry, beef casserole and lots of soup. I've batch cooked (for the first time ever!) and have meals in the freezer - unheard of for me, but so convenient after work :T.

So, today I have a gammon joint to cook and would like to do it this afternoon for either tonight or tomorrow nights dinner. What do I do please?? Do I need liquid in it?

    Thanks :D

    Hi
heres what I do depending on my mood!!! One on these options at a time!

no water!! the liquid comes out of gammon pretty quick,(although I do no water only when I am at home so I can keep half an eye, but no problems as yet!)

Small amount of apple juice just to literally cover the bottom on the SC

Sliced apples for the gammon to sit on

or if no apples and Im at work I just put some water just to cover the bottom of the sc .

If you look on line and search either crock pot or slow cooker there are quite a few recipes, including gammon in coke but I havent tried that as we like our gammon fairly plain!

    Good luck x

Certainly do! Here you go -

Slow Cooker Pork Recipes - Pork Cider & Apple Casserole
    • 1 tbsp vegetable oil
    • 1/2 chopped onion
    • 1/2 celery stick (in mm slices)
    • 1/2 large tart chopped cooking apple (about 175 g when chopped)
    • 375 g loin pork
    • I tbsp plain flour
    • 150 ml dry or medium dry cider
    • 1/2 tsp dried thyme
    • 1 tsp dried sage
    • salt and freshly ground black pepper
    Method:
    1. Trim any excess fat off the pork and cut into 2 cm cubes.
    2. Heat the oil in a large pan and gently fry the pork until lightly browned all sides. Transfer to the slow cooker bowl.
    3. Add the onion, celery, and apple to the pan and gently fry for 3 minutes. Stir in the flour and then gradually add the cider.
    4. Bring to the boil stirring continuously, and then add the herbs and seasoning. Transfer to the slow cooker bowl and mix well.
    5. Close the lid, and cook on low for 6 - 8 hours.
    Notes:
Serves three people generously Or five for smaller portions.

This was delicious, but not generous portions (I wouldn't say we're huge eaters but it literally only just did me, DH, DD and DS (7 and 3) so I'd up the quantities a bit. Very very tasty and will do again.

Me too, it smells gorgeous! I use boneless pork rib chops as they're cheaper.

Got a whole chicken in my sc today. I've put a whole peeled onion in the cavity and it smells yummy. Going to serve it with potatoes, brocolli, carrots, yorkies and gravy. *Drools*

Tried a Lancashire hotpot in it the other day and it tasted great but I was a little disappointed that it was quite watery. I coated the lamb in seasoned flour before i put it in the sc, but it didn't make any difference.
I couldn't stir any cornflour into it either because i had a layer of sliced potatoes on the top which I couldn't get underneath to stir in the cornflour iyswim...
Any ideas of how I could improve the hotpot please? Thanks :)

I think its just a case of adding less liquid at the beginning, I think the general rule is to halve the amount of liquid. A slow cooker doesnt allow anything to evaporate so it stays liquidy.

Thank you, will give it a go next week, it sounds gorgeous.

The chinese chicken was lovely, the sauce was quite runny though.

What do you recommend I try next?? I'm not very good at cooking (despite having 3 kids aged 20-3!), so it needs to be foolproof lol.

So far I've made spag bol, chicken curry, beef casserole and tomato and lentil soup, but would really like to try something else.

In the freezer (that I can remember) there are pork chops, chicken breasts, mince and salmon fillets.

Any suggestions?? Would the pork and cider recipe work with the pork chops do you think? I'm trying to lose weight and also cut our shopping bill down so try to add lots of veges and lentils where I can.

    Thank you :D
