In my slow cooker today.... part 2

Hello All,
I am new to MSE, I have been lurking on many threads for a few weeks.
I use my slowcooker at least twice a week, today we had chicken breast and a jar of homepride sweet & sour sauce, tomorrow I am going to cook myself some chilli which I freeze in small portions to have on jacket potatos when my husband works late and I only have to cook for the kids.
There are loads of lovely recipes I am going to try as I tend to cook the same thing.0 -
The house is once again fragrant with the smell of spicy slow cooked food.
Two chicken legs today (£1.60 reduced organic free range from Waitrose), with finely chopped carrots and okra, with a tomato based sauce. I started off in the usual way by roughly chopping one large onion, finely chopped 5 garlic cloves, fried with olive oil, in a large deep pan. Then I added turmeric powder, garam masala, tandoori masala, chilli powder, salt and pepper. I soften the onions and garlic in the spice mix, and add the de-skinned chicken legs. I brown them all over amking sure that they are coated with spices and onions, then add the chopped carrrots and whole okra (I remove the top stalk). I then add a tin of chopped tomatoes, juice of one lemon, and bring to the boil. I turn on the slow cooker to heat up for fifteen minutes, and then transfer the mix from the pan.
This takes around three to four hours on high setting, and is a warm, comforting dish, suitable for this time of year.0 -
I have Sausage and Bean Casserole from the Schwartz slow cooker packets. Did the chicken in red wine one last week and it was lovely!0

I do the following recipe every week and we love it.
This is for two people.
Slice 2 medium potatoes into bottom of slow cooker.
Next slice 3 leeks into rounds and put on top of potatoes
Then sprinkle vegetable stock and mixed herbs over leeks and pour a cup of cider over everything
Then place 4 small chicken thighs or 2 large thighs on top.
Season and cook on high for approx. 5 hours
We like this put in the oven (without top) for the last half an hour to crisp up chicken skin.
Quite an economical recipe, especially if you grow your own leeks.0 -

Yes, I put my slow cooker in the oven on about 180 C. all the time with no problems. Just don't put the lid on. Mine has a plastic knob which would obviously melt in the oven.0 -
Chicken thighs with lots of peppers and paprika, will have with rice tonight and make the leftovers into a pasta sauce by adding a tin of tomatoes for wednesday. Yum.0
