In my slow cooker today.... part 2

    i have a nice big chicken squashed into mine. i put it in at 7 this morning. and it is starting to smell very yummy.

    it will do a few meals for us. tonight i will turn it into oven baked risotto, tomoz home made chicken pie, roasties and veg, then a curry and with whast left will prob make up into a white sauce and freeze for a pie later on in month.

  • Butternut Squash soup, OH loves it and will do for about 5 days for his lunch :j
    I, not events, have the power to make me happy or unhappy today. I can choose which it shall be. Yesterday is dead, tomorrow hasn't arrived yet. I have just one day, today, and I'm going to be happy in it. :)

    how long do you cook it for and what else do you put in with it/ how much liquid? thanks

  • Some great things we've done over last couple of weeks (and cheap!) have been American style baked beans:

    Got a pumpkin for 25p so it's crammed full of pumpkin! Plus a chopped red onion, red chilli & garlic and a little olive oil.
    I'm using a recipe for butternut & chilli soup from my slow cooker book and that's all she says to put in, then you add stock and seasoning after mashing it.
    Couldn't fit all the pumkin in, so I'm cooking the rest in the microwave, I figure I can mash it and freeze it and then use it for soup.
  • MY DH made some delicious lime curd in the slowcooker today :D It's the first time we've used it for anything other than a main meal. Will be trying a slow-cooker christmas pud this year too.

    Can you post the recipie please sounds yum. Guessing for Lemon I replace the Limes with Lemons : )
