I was good last night, went over points slighty, but due to exercising it's fine, just swapped some.

People are now noticing i have lost weight :D yay.

We're trying another WW recipe for dinner tonight, stir fried rice with pork and prawns - looking forward to it!

Can I share a wonderful WW recipe that I'm loving at the moment? The recipe is an American one, so uses cups, however last time I made it I weighed it out on the WW scales to get the points per muffin.

Oatmeal Applesauce Muffins

Number of Servings: 12
Weight Watcher points: 1.5 (or 2 if using normal brown sugar)

1 cup old fashion rolled oats (not instant)
1 cup skimmed milk
1 cup whole wheat flour
¼ cup Splenda brown sugar blend (or ½ cup normal brown sugar)
1/2 cup unsweetened applesauce
2 egg whites
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
2 tsp. apple pie spice (I used a bit of cinnamon and tiny bit of ginger, mixed spice would also work)
Directions
1. Soak the oats in milk for about one hour.
2. Preheat the oven to 400 degrees (200’C).
3. Spray muffin pan with cooking spray.
4. Combine the oat mixture with the applesauce and egg whites, and mix until combined.
5. In a separate bowl measure and whisk the dry ingredients together.
6. Add wet ingredients to dry and mix until just combined. Do not over mix the batter or the muffins will be tough.
7. Spoon muffin mixture into muffin pan.
8. Bake for 20-25 minutes or until done.
9. Remove from pan, cool and enjoy.
These can be frozen and reheated in the microwave for a quick breakfast.
Number of Servings: 12

• Good luck for tonight Poppie :)

I've just done my 30 mins exercise dvd session - head is pounding now and I'm sweating like a fat kid in a bakery. I always get terrible headache when I do 30 mins exercise. Not fun. But I feel better for doing it! :D

So far today I've eaten:

B:
Mr.T Light Choices cranberry and blackcurrant cereal bar 1.5

D:
2 x slices WW thick bread 2
1/2 tin WW spaghetti 1.5
2 x egg whites 0
WW rice pudding pot 1.5

Am rather full now, so am off for a shower to cool off and clean up, then think I shall get my motivation up and take the dogs out for a walk as the snow hasn't fallen today, hooray! (still bloody freezing though!)

For tea I've got planned spanish style chicken with rice. Can't wait - a lovely healthy and filling tea!

Then am off to my cake decorating mentors house for a lesson - which I'm hoping won't involve eating any cake this week - EEK! But I will have points left over incase such things happen ;)
