  • Sorry for the late weigh in. I've gained 1 lb this week :mad: despite 4 classed (does pilates count?) and a swim. I wore a skirt last week to work that did up comfortably for the first time in yonks though, so I think I'm redistributing the weight somehow!

    Spud - Beef skirt is brilliant, cheap and lean. Just pop it in the slow cooker all day with your veg and chunks of potato :D

    It is all about the planning, definitely. Could you plan meals that are done in the SC and DH's portion just needs microwaving from the fridge when he gets in? Or could you start the SC off as you go to bed so it's ready for when he walks in and then what is left can be your dinner for later that you re-heat?

    I have a lovely spicy butternut squash recipe I've taught on a couple of courses if you'd like a copy.

    (I nicked and adapted it from Gordon Ramsay but hey, I'm sure his legal team won't come knocking, he's hardly a 'somebody in cooking' is he ;) )

    Hi folks great to see everyone motivated for Nov. Somehow i have managed to lose -3lbs not sure how that happened but woo hoo:j:j. Also have a new job which might help cause old one was crap with a horrid boss so Nov good for us all.

    I'll definitely look for beef skirt and shin at the local butcher, thanks for the tips.

    Made a huge pot of veg chilli in the slow cooker on Sunday which was lunch yesterday and will be dinner tonight.

    I feel much better that I have decided to take control back.

    I think its a great idea Spud to find meals that you all like and then plan from there. At one point in the past I was sometimes making 3 different meals to please everyone........now we have a bit more of a limited menu but it works better (if I do the planning first that is)

    When I was really debtbusting I had a weekly menu and put it on the fridge, the kids quite liked seeing what they were getting for dinner every night - bit like the menu at school:rotfl:

    Firm favourites here are
    • Veg Chilli (I use Asda veg mince and loads of different veg)
    • Roast Chicken
    • Chicken Fajhitas (made with the leftover roast chicken with peppers and onions)
    • Spag Bol (agian I use Asda veg mince)
    • Spuds Curry :) (yes your recipe lovely)
    But these things take time, I know that I'm, the most inept that ever stepped.

    Well my healthy eating plan went out the window yesterday as I nearly fainted at work having a blood test done! Cue lots of biscuits being shoved my way (which I didn't turn down!) Let's hope today goes a bit better!

    How is everyone doing?

    I am at home today studying so will really have to try and ignore the food cupboard as I usually have a plate of biscuits/bowl of crisps next to me while reading the books:o

    Planning of meals is going well as I bunged a chicken in the Remoska last night so that is now in the fridge ready for dinner tonight for OH and the boys as I will be at work.

    Meals for today
    B - Bagel with reduced fat butter
    L - Veg Chilli (still some left)
    D - Savoury rice with roast chicken slices (at work)

    No walk last night due to it pouring down all evening:mad:
    But these things take time, I know that I'm, the most inept that ever stepped.
  • Hi, I have been lurking around the forum for a few weeks, feeling very new to all this! Having returned to my "homeland" 3 years ago I've managed to gain 3 stone - is that really a stone a year? Far too many sweet treats in this part of the world and I've a very big sweet tooth. Sadly, for someone who turns 40 next year, I'm getting out of breath, my knees are hurting when I walk up stairs and I've a wardrobe full of clothes that no longer fit!

    I've a wonderful husband who loves me and never criticizes but enough is enough. I've done Rosemary Conley, I've been to SW and to be honest I'd rather put the £5 in a savings pot for a weekend away somewhere nice!!!!

    So .... here goes, I'd like to sign up for the Christmas challenge. Please could you put me down for 10lbs. That's 10lbs off 78lbs .... a long way to go, but NEED to start somewhere.

    I found that 2 apples made it too overpoweringly tasting so I would use 1 very small one. Substitute the butter for spray oil and if you want to be extra good, leave the pancetta out but I think it would also work really well with chunks of roast gammon/boiled ham etc.
