leftover speciality cheeses

Hi Happy new year! I have a load of cheese leftover from xmas that really needs to be eaten. Once again i bought way too much:rolleyes:
Does anyone have any ideas what sort of dishes i could make? I have a stilton with festive fruits and one with apricots,wensledale with cranberries and half a camembert. I would be grateful for any suggestions.

    I made a layered potato bake the other day with brie (recipe is supposed to be gruyere) but the brie worked really well with a little gruyere over the top too. I don't see why it wouldn't work with camembert, or the stilton or wensleydale even.
    Basically fry 700g onions in some butter for 30 mins until soft and slightly caramelised, slice 900g peeled spuds (waxy ones preferable to floury for this) thinly (I used my food processor) Then layer potatoes, onions, some chopped herbs (I used rosemary and a little sage) and a little salt and pepper in a buttered gratin dish. Pour over 250mls single cream (I tend to use a mix of double and single-and I actually used 600mls the other day-but I also used 1.5kg spuds and made 3 dishes)
    Then bake for an hour covered with foil at 180, then remove foil and bake for another 15mins.

    4-cheeses pasta - basically it does not have to be any particular cheese, you just grate all the cheeses, cook the pasta, dress it with a bit of butter and then chuck all the grated cheeses in.

    I am sure that the fruits in the cheeses you got would be perfectly nice with pasta too, even if not a traditional Italian addition hehehe

    The traditional recipe would call for Fontina, Gruyere (or Emmenthal), Gorgonzola and Parmesan, but you can easily substitute them with Cheddar, Stilton, Edam and any other hard cheese (although Parmesan gives the pasta a particularly lovely flavour!).
    Finally I'm an OAP and can travel free (in London at least!).

    If you're going to use them for cooking, you can freeze them, which should save you from feeling like you're turning into cheese... ;)
  • We had a welsh rarebit type thing the other day - lots of random bits of cheese blitzed in food processor with an onion and an egg, then spread on toast & grilled. There was some of the mixture left, so for tea yesterday I made pizza dough, rolled it out & spread over the cheese mix (added about a tablespoon of cream cheese that was festering in the fridge) then rolled it like a swiss roll, sliced it & baked it - very good accompaniment to our goulash.

    I like the sound of swiss roll bread dough and cheese - will give that one a go thanks.

    I have a ton of cheese too! thanks for the tips - forgot all about cauliflower cheese!

    Used some up in macaroni cheese the other day and will try some rarebit too to use some up tomorrow

    Had cheese and biscuits for tea and feeling a little cheesed off myself with how much is left over!
