Sorry if this has been asked before. I have loads of cheeses left from xmas and was wondering if anyone had any nice recipes to use it up. Any help would be gratefully recieved.

We are still munching ours as well. OH said that he would like a different tea to cold cuts and cheese tonight
Before xmas we had mushrooms and bacon on toast with blue cheese melted over. It makes a much bigger meal than it initially sounds.

We have loads left too. I've given away the blue which I can't bear and we are eating our way through the rest. If it hasn't gone by the weekend I will grate it and freeze it. Often do this with reduced cheese during the year and then just get a bag of it out when I need it and use for lasagne, mac and cheese etc."A savoury muffin?? As if life wasn't disappointing enough!" I know I replied to this thread above, but can I ask as well about Brie?
We are happy to just eat as it is. The use before date is something like the 11th January, but packet says once opened consume within 3 days.
Being as we are still here, I guess I can ignore thatbut for how long further. I know thats "how long is a piece of string" but would like your opinions on the matter.
The packet wasn't sealed as in air tight in the first place anyway, just the shiny type paper folded over and stuck down. So I would have thought the "once opened consume within three days" wouldn't apply anyway.0 -
I've made a fantastic (atherosclerosis inducing) mixed cheese macaroni with bacon; crumble the cheese into the white sauce but leave some little chunks and you'll get melting blobs of different cheeses in the pasta...really quite decadent.
Hugh Fearnley-Whittingstall did a wonderful looking cheese souffle on River Cottage with leftover cheeses but I can't find it...it's something like this one on BBC Good Food.
I've also found a recipe online for leftover cheese spread.0 -
For brie I do a yummy supper/substantial lunch with croissants, brie and ham. Simple as cut in half and make a brie and ham sandwich and bake in oven for about 10 minutes until it's all melty.
The economy gastronomy lasagne with leftover roast pork and broccoli is supposed to be taleggio but it works really well with brie instead.
For blue or hard cheeses tat ave gone a bit too hard how about adding to a soup, so broccoli and stilton, cauli and stilton (or any blue), sweetcorn and cheddar chowder - works absolutely fine with frozen or tinned sweetcorn too so a good storecupboard one too.0 -
I make parsnip and stilton soup, very nice!
This year in addition to the stilton leftover I also have a piece if brie, and was thinking of baking it like a camembert and serving it with crackers/toast and cranberry sauce.0 -
Blimey there are some really good ideas here thankyou:) I think the macaroni cheese sounds great as i also have some leftover gammon that need eating! Stiltwalker that croissant recipe sounds so simple i think gonna have to do that as well lol. Then i think broccolli and stilton soup is next on the list yummy! Thankyou all so much,*goes straight to the fridge to start the cheesy fest*:D0
