    Had cheese and biscuits for tea and feeling a little cheesed off myself with how much is left over!

    Was that cheese and ritz crackers with pickle? I've been good apart from the obligatory Baileys and mince pies at christmas, but I now feel a snack attack after your post.

    I'd grate first and then freeze, you can then just keep getting out the odd handful when you're cooking cheese sauces. The cheeses with fruit in also make really nice cheesey dips - I've used them from frozen and they're fine (thawed) whizzed up natural yoghourt/cream/mayo.

    It was delicious, really moist, DS and OH loved it too, despite moaning about pudding with cheese in it.

    Melting down all the sauces together for a pasta sauce works really well, as it does with cauliflower cheese, or a mixed vegetable bake with cheese sauce. However, a word of caution. If you're having guests, make sure nobody is allergic to blue cheese, as this is becoming a more common allergy and eating it can cause the sufferer to go into anapherlactic (spelling ?) shock, have severe breathing difficulties and need to be rushed to hospital. Didn't know this until it happened to somebody I know.
  • Gosh thankyou all for some brilliant ideas!! I think i may make a four cheese pasta and then maybe freeze the rest. I didn't even think of doing that lol. Parsonswife8 thanks for that link,i shall keep that handy for future use!! Again thanks for alll your ideas:T

    any of the cheeses mentioned would be lovely in a pumpkin or squash soup. you could use a bit of curry spices of mixed spice for lovely creamy warming soup mmmm

    also you could make some dough, roll into a ball, push a piece of cheese into the center of each and bake for scrummy rolls!

    i like the quesadilla idea mentioned above, you could play on the sweetness of the cheese using some of the gorgeous pickled red pepper slices from lidl or why not make red onion tartlets using some of the cheese with fruit in it?

    We have tons of fruit cheese left over after Christmas and seeing as we arent massively keen on the flavour by themselves (or on crackers) we would like to know if anyone has any recipes to cook with them..

    They are Wensleydale and cranberry and one with apricot.. I need some tips.. Is cheesecake a possibility?
    Generally savory is better than sweet.. so would they work in a curry??
