Brie is great if you cut the top off, stuff in some slices (or chunks) of garlic, a splash of white wine (optional) and then put the top back on, wrap it up in greaseproof paper or foil and bake (180 C - 20 mins or so), then dip in to it bread or carrots, or anything really!
Blue stilton works well in a cheese sauce, make a roux (butter, flour, milk) then add the stilton and pour over pasta, or veggies, or just put some on steak...
or i am sure you can make little savory cheese puffs/biscuits with blue cheese.. nigella lawson has a recipe..0 -
Brie is lovely hot, or in a sandwich with cranberry sauce.
Stilton is good with mushrooms, dice them into an oven-proof dish or you could use portobello mushrooms, sprinkle small pieces of Stilton on top and then put some breadcrumbs on top of that, then pop into a hot oven. Serve with salad or hot veg and bread or potatoes. Yummy.
Can't help re the Wensleydale, but then I'd happily eat it on crackers!**Thanks to everyone on here for hints, tips and advice!**:D

Stilton is great in risotto (in place of gorgonzola). Add a little white vermouth as well, and you have riso al martini
Brie - sandwiches with leftover cranberry sauce; toast half a baguette under the grill, layer some slices of avocado on top, then brie, then grill :drool:; slice, place in a warmed bowl and stir in pasta and broccoli (works for stilton too)0 -
Broccoli and stilton soup is very nice. What about an apple crumble with the fruit cheese crumbled in the topping or with the apple or something? Freeze the stilton in small portions and use to cook with.Mama read so much about the dangers of drinking alcohol and eating chocolate that she immediately gave up reading.0

I love the apricot one On top of a grilled pork chop, cook the chop, put some of the cheese on it, back under the grill, delish!!!
The cranberry one might be good doing the same or to stuff a chicken breast with??
They can be cut up and frozen to use a little at a time so it won't go to waste
