    Chicken and Ham pies,
    Ingredients
    25gm butter, 350gm cubed chicken breast,125gm cubed cooked ham,
    25gm plain flour,300ml chicken stock,100gm frozen peas,
    100ml milk,350gm readymade ouff pastry,
    2tbsp creme fraiche, 1 beaten egg.
    1tsp dried herbs,1 tbsp veg oil.
    1 small sliced onion.
    method

    place butter,flour,stock and milk in a saucepan whisking with a ballonn whisk until thickened,Bring to the boil then reduce the heat and add creme fraiche and herbs,season with salt n pepper and simmer for 2/3 mins.
    cook onion and chicken in fry pan with the oil for 3-4mins until onion is soft and chicken is browned.
    stir chicken and onions into the sauce,cover and simmer for 10min,remove pan from heat and add ham and peas,,divide mixture between 4 pie dishes(or 1 large one)
    roll out pastry,cut out 4 circles(slightly larger than dish tops,use scraps to make thin rims for dish tops,brush dish tops with egg then place on thin strip rims,brush these with egg and add round pastry lids,brush with egg,make a small X in centre and bake in top of a preheated oven -200c/400F/Gas 6- for 20mins

    To be honest we didnt use the creme fraiche--it was frozen solid when i brought it home from Tesco,and instead of chicken stock we used 300ml made with 1 Kallo very low salt veg cube,and the pies were delicious..next time i wont faff around with 4 pies,im just gonna make 1 large one.

    Week 10,total weightloss is now 13.5lbs Week 11 STSweek 14(I think)..-2, total loss now 1 stone exactly
    GOT TO TARGET..1/2lb under now weigh 10st 6.5(lost 1st 3.5lbs)

    Just stumbled across this thread and I'd like to join in please.

    Not promising that I will do a new recipe every week, but I'm sure that we will try something different most weeks (even if its my own ideas).

    Next week I am going to do Cajun Salmon, Veg in a lime and chilli dressing and jacket potato topped with avacado & tomato salsa. Slightly different to my usual cajun tuna with salad and jacket pot - trying to get away from putting butter on the potato!

    I too have many cook books and get the good food mag every month (pressie from OH) and have in the past tried to do a new dish every month.

    Love the recipes that have been put up so far and its great to have some new inspiration.

    Tried a new side dish last night. Bill Granger Individual Potato Gratins. Ingredients simple but a bit fiddly getting them into the muffin try. Tasted good though....sorry no piccie!

    I love this idea! I have so many recipe books but can't bring myself to get rid of any, even though I hardly use them. So I'm going to join this challenge - I'll choose a 'recipe book of the month' (maybe two) and only use those to cook from. This will give me an idea of whether or not the recipes are any good, and if they're not, I can give the book to charity or sell it on Green Metropolis or Ebay.

    Having said that, I won't be starting until next month because January is Storecupboard Challenge month and I'm not buying new foods specifically for resipes!

    I felt in need of something slow cooked and warming tonight. It's snowing, again, despite the met office forecast claiming it won't until tomorrow afternoon ... when it may snow for a day or more. Nothing has melted yet.

    So I pulled out Hugh Fearnley Whittingstall's family cook book and I am making shin of beef cooked with ginger and garlic (is that what it was called?). The liquid the meat is cooked in is apple juice, a bit of vinegar (he said cider vinegar but I only had white wine vinegar), soy sauce (I could only find tamari), redcurrent jelly, garlic and ginger. It looks and smells fantastic. We'll have it with noodles and some vegetables, and the children can have a soy sauce omelette with their noodles. I may try to take a photo.

    Hi Nelski,

    Just read your thread and would love to give it a go as I'm very similar to you, stacks of cook books but no cooking going on :o (I've a penchant for Gordon :drool: and have all his books but never actually cooked anything.....only bought em for the pictures....and not of the food ;))

    I would love to give it a go today, but car is snowed in and waiting for OH or DD1 to get home from work so I can bus it to Mr T's, I've heard that after all the panic buying there's nowt left, so we shall probably have beans on toast today :rotfl:

    But I will have a route through some books tonight and see what I can make this week! :)

    Evening all, well my recipe for the week was Gordon Ramsay's cottage pie with pan roasted carrots, it was delicious, i had hoped to freeze half of it but the kids begged for seconds and who am i to argue :rolleyes: next time i will make more veg to go with it :D.
    I was tempted to use my normal mash on top (Delia's butter and double cream mix :eek:, but decided to follow the recipe and went with two egg yolks and parmesan instead, i'm glad i did it was smashing) :T
