I'm going to make a soup every week to have for lunches!
Sorry to crash your thread, I love this it's a great idea as normally it's curry, fish, spag bol, pasta, roast dinner, leftovers, takeaway in my house. Time to mix it up ay!
Anyway I have started the new year making a batch of soup for each week day lunch and I love it. Going to make some sort of spicy veg one today with a handfull of rice in it. Excited!
We've also decided that instead of takeaway night we will go to the supermarket to get ingredients for a recipe out of one of my many books each week as a treat. In all honesty it probably will taste better than fish and chips, pizza or chinese mucky tray which is all we can afford these days.

What a great thread:T! I don't know if I can manage one new recipe a week but I have the Good Food Magazine calendar and decided last week to cook each month's recipe (January's is a spiced carrot and lentil soup which I'm pretty sure I've made before). They all look do-able and not too costly. Good luck everyone

I tried a new (lower fat) version of kedgeree the other night, using hot smoked salmon.
http://www.bbcgoodfood.com/recipes/3221/easy-spiced-salmon-kedgeree
It was a lot less faffy than my usual version, which has poached smoked haddock in prawns in it. It wasn't as rich, because the eggs were boiled (I usually scramble them into it), there was no cream or butter, and also I added lime juice. I didn't have curry paste so I used a madras curry powder instead.
And the verdict? It was fantastic, much better than my old version, as well as easier. We ate it with a salsa using chopped cherry tomatoes, onion and some fresh chilli.Mortgage started on 22.5.09 : £129,600Overpayments to date: £3000June grocery challenge: 400/6000 -
And I just used the rest of the salmon for a lunch. I was going to do burgers with this lighter mayonnaise but they fell off the menu. So I made a salad with hot smoked salmon, leftover boiled potatoes, chopped red pepper and cucumber, bound with this dressing (for 1): 1 tsp mayonnaise, 1 tsp greek yoghurt, 1/2 tsp grainy mustard. Mixed it all up and had the salad on top of some little gem lettuce.
Very nice, and I recommend the dressing.Mortgage started on 22.5.09 : £129,600Overpayments to date: £3000June grocery challenge: 400/6000 -
My recipe for this week is Salmon fishcakes as I have mashed spud in freezer and a tin of wild alaskan red salmon that has been in cupboard for about 2 years so best use it up!
Am going to serve them with chips and peas (I know I know, way too many carbs but hey...)
I don't have matzo meal but I do have breadcrumbs so going to use those.0 -
I'm trying the 'faking it' lasagne recipe from the vegetarian society website. It uses TVP. I bought this some time ago and is looking at me from the cupboard.
I don't have mushrooms, which I would normally use in lasagne, but the recipe is good in that it states '550g mixed vegetables'. I don't plan going shopping - live near Nelski methinks and it's a bit rough. No desire to go shopping any way!
I have a combination of fresh and frozen veg - onion, carrot, leeks, peas, some fresh lasagne in the freezer and a tup of cheese sauce from the freezer. Good as milk is going down and I don't want to go out!"Knowledge is knowing that a tomato is a fruit. Wisdom is not putting it in a fruit salad"

I made my lentil pate!
HERE is the recipe. It turned out absolutely lovely although I have to wait for it to chill before I can tuck in and it's supposed to be for tomorrow's lunch but I suspect it may not last that long.
It was also very easy and although it was in the oven for ages, there was very little in the way of actual preparation so great for someone busy as you can just toddle off and do something else while it's baking. It looks very boring though unfortunately! Although when it's sliced and served up it might look more interesting.
Haven't decided yet what next week's recipe will be, I'll have to look through all my books, what a chore :rotfl:0 -
Well, I know I wasn't supposed to buy any more recipe books. But I found a copy of Charmaine Solomon's Complete Asian Cookery in a charity shop this afternoon. And couldn't resist. It was £1.99. Having looked at Amazon, I think I did well. It's a reprint from the 1980s and clearly has never been used, since there isn't a single food stain. There will be soon.

Evening all, well my recipe for the week was Gordon Ramsay's cottage pie with pan roasted carrots, it was delicious, i had hoped to freeze half of it but the kids begged for seconds and who am i to argue  next time i will make more veg to go with it
.
I was tempted to use my normal mash on top (Delia's butter and double cream mix , but decided to follow the recipe and went with two egg yolks and parmesan instead, i'm glad i did it was smashing) :T
Hope the links work!
