don't Americans called them shirred eggs and cook them in a frying pan rather than our way of using a saucepan? I'm a pinch of mustard powder and plenty of parsley girl myself0

My favourite way to have scrambled eggs is: 2 or 3 eggs, break all these in the pan, then splash enough milk in so each egg looks like it has a small solid white. Then I whisk with a fork (I quite like to not break the yolks up too much so you get chunks of yellow and chunks of white) and add a knob of butter, then salt and black pepper.
Heat very slowly in a small saucepan and keep stirring with a wooden spoon so it doesn't stick to the pan or itself. They are done when they are all "lump" and no liquid!
At the same time, fry or grill a couple of rashers of bacon until they are crispy, and when the eggs are done, serve them over two slices of hot buttered toast. (Grill the toast, it's better! Also I prefer brown bread.) Now open a tin of tomatoes (whole ones are best) and tip half or the whole tin into the saucepan you used for the eggs. While they are heating gently (you can turn it up slightly) drain the bacon on a spatula and put it on top of the eggs. Then when the tomatoes are hot, pour them over the entire plate, sprinkle a bit of black pepper over the top and enjoy!I don't believe and I never did that two wrongs make a right0 -

Serves 1
INGREDIENTS
2 eggs*
1 tablespoon of butter
Ground pepper to taste
METHOD
Put the butter in a saucepan on a medium heat. Melt the butter. Break the eggs into the pan and pick out any bits of shell. Season with the pepper. Stir frequently to stop them sticking, and to scramble them. Cook for 1 to 2 minutes until the eggs are still moist.
ADDITIONS & ALTERNATIVES
Serve on 2 slices of hot buttered toast.
For an impressive breakfast for two, add a small packet of smoked salmon. Cut the salmon into 2cm (1 inch) pieces. Scatter the pieces on top of the egg. Serve with orange juice and coffee, or even a Buck’s Fizz (champagne and orange juice).
TIPS
It is better to slightly undercook eggs than to overcook them, as they end up like rubber.
IMPORTANT NOTE
Undercooked eggs are unsuitable for babies, toddlers, pregnant women, elderly people or people who are unwell.

Can anyone tell me the best way to clean scrambled egg pans, please? Is there a magic way to clean them? At the moment I leave them to soak with a bit of washing up liquid but they still need a lot of scrubbing.

This won't help you now but next time you make it do it in the microwave in a plastic bowl. Stir at 30 sec intervals. Soak the bowl in water with a bit of washing up liquid while you eat and it comes off really easily.
Biological washing power and water boiled in the pan may shift it.0 -
I bought a special non-stick pan which I keep for scrambled eggs ONLY, this helps if you don't use it for any other purpose.
Before I could afford to have a single purpose utensil, (everything else in the kitchen MUST have at least 4 uses) each time we has scramblies, the pan was turned upside down on the worktop, draining board or sink the INSTANT it was emptied, or fill it with water instantly the pan is empty. Give it a whirl, it worked for me:j:j0 -
Scrambled eggs MUST be cooked in a non-stick pan unless you enjoy pot scrubbing.You never get a second chance to make a first impression.0

After you've soaked and scrubbed your heart out next time you make scramblies try turning the heat down. Eggs cook at quite a low temperature, so they won't become welded to the pan if they're cooked gently.0
