I did my wedding cake as a cupcake one, my tips would be use muffin cases instead of fairy cake cases then they're big enough for the cake and the icing. You really need to use royal icing if you want it to set properly, I bought the packs that you just add water too instead of water and glycerin.
I just used a basic chocolate recipe (makes about 18 depending on size):
Gas 5, 15-20 mins
4 oz flour,
1oz cocoa powder,
4 oz caster sugar
4oz butter
2 beaten eggs
I took the time to cream the butter and the sugar first then added the flour mixture and the eggs a bit at a time, so it was really light.
I can't help on the lemon recipe I'm afraid, I'd make a couple of tester batches up though to test how many spoons of mixture you'll need per case and that they taste ok. I've got pictures of mine if you want some inspiration.

I made these for my boss when it was her silver anniversary party using a basic fairy cake recipe but added an extra half teaspoon of baking powder to each batch to give it the extra lift it needs in muffin cases.
110g (4oz) butter or margarine
110g (4oz) caster sugar
2 medium size eggs
75g (3oz) self-raising flour - sieved
25g (1oz) cocoa powder - sieved
Muffin Cases
75g (3oz) unsalted butter
175g (6oz) icing sugar
3 tbsp cocoa powder
milk or warm water
The method is identical to any other creaming method cake and works well for lemon as well. I made some for my sister when her baby was born last week, just omit the cocoa and add an extra 1oz of SR flour so that you are using 4oz total. I added 2tsp lemon extract and some grated rind to the cake batter then 2tsp extract to the butter icing.
The choccy ones would be great with a simple ganache on top and depending on the way you make it, you can pipe it on. You need a very large star nozzle to get the swirl, mine isn't quite big enough and most bog-standard kits only ahve a small one so I am after a new one.
Choccy ones, the icing ended up with bubbles in it because the icing sugar wasn't very well sifted
Lemon ones, bit more rough and ready as I was rushing.0 -

I did 100 cupcakes for a friend's wedding earlier this year.
Some tips I learned along the way: :rolleyes:
Use grease resistant cake cases - Lakeland have them. Otherwise, the case may flop down around the cake or there is a greasy "tidemark" around the case and above the sponge iyswim.
Royal Icing+cupcakes+Morwenna=disaster. Only do royal icing (a la Nigella who makes it sound easy:rolleyes: ) if you are confident.
Mine ended up topped with buttercream, (just like Floyds choccie ones,)with the buttercream tinted cream to match THE dress and topped with sugar flowers in lilac. (Bridesmaids dresses.)
Transported them in a long drawer (from a tallboy) and a lettuce box, lined with baking parchment and clingfilmed over the tops - thanks to helpful suggestions from on here :T

I agreed to make my friend 100 cupcakes for her wedding :eek: She's decided to have them instead of a cake. I'm no Delia, so I'm really scared that I might not bake them up to scratch.

shop bought cake mix!! a shops own brand usually costs no more than 50p a box and you can get around 12 cupcakes per mix. hope this helps!0
