I make blueberry ones; you make a basic vanilla cupcake batter and start to bake, then you take them out the oven after about 10 minutes and press blueberries into the now slightly firm surface. Back into the oven for the last 10 - 15 mins, and the blueberries pop a bit & soak into the sponge but don't all drop to the bottom like they do if you mix them into the batter. Cool, dust with icing sugar, and Yum!0

I had a lemon drizzle muffin at the weekend...yummy!0

You could top a regular fairy cake with melted chocolate and sprinkles or a smartie - the chocolate will set so they won't get squished in the tin, even piled up.0

jam doughnut cupcakes! just like ordinary cupcakes except you only half fill the paper cases add a small spoonful of jam then top up with the batter, bake as usual. when cold dip each cupcake in melted butter then straight into caster sugar! My gds favourite cupcake!
er forgot to say you have to add at least a half teaspoon of good vanilla to your basic cupcake mix! or it doesnt taste right!0 -
