I have volunteered to make my friend's wedding cake in a fortnight, for which she has asked for lemon and chocolate flavoured cupcakes (that's separately, not lemon-and-chocolate, iyswim)
I can find loads of recipes on the internet but thought i would see if anyone had a tried and tested, fail-safe yummy recipe, particularly for the chocolate ones as i always find it hard to find a really chocolately recipe.
Obviously they have to look pretty too, I normally make my icing by adding a little water to some icing sugar - most times the mix is too runny and it goes everywhere. For the wedding i thought i would try the american style frostings, which i think give you a bit more artistic licence, and cover up more mistakes! Again I've found loads of recipes on the internet, but not sure what to go for. some of them require egg whites too and I'd rather avoid those in case any of the guests are pregnant.

Good luck Tondella, have you thought about butter icing and using a piping bag with a star nossel to decorate the tops.:j0

I seem to remember a really nice cupcake recipe in Nigellas Domestic Goddess cook book with a fondant icing on the top. Cant remember how if theres eggs in the icing or not. Sorry on my way out at the moment but will try and hunt it out when I get backSorting my life out one day at a time0

Here are a couple of Nigella recipes, the chocolate ones have cherry in them but look and sound lovely and the bottom link is just normal cupcakes, but they look very pretty for a wedding.

I would use a recipe that asks for 'real' chocolate for a real luxuary cup cake.
Cover using butter cream icing i always use 50/50 icing sugar & butter - then for chocolate icing add melted plain chocolate to taste (melt a few chunks in the micro in 20 sec blasts stirring inbeetween untill liquid) stir into buttercream icing and either spread over top using knife or pipe on.
for glace icing that dosent run everywhere add 1/2 oz butter per 8oz icing sugar & 1-2 tbsp bopiling water.

Don't know about recipes, but have you thought about decorating the tops with fresh flowers, it makes them look really professional.0

When I make chocolate cakes I always use Drinking Chocolate instead of Cocoa. It gives a much nicer flavour.0
