I made chocolate cup cakes the other day using a devils food cake recipe....MMMMMMM!!! My mum made chocolate and lemon cupcakes for my wedding in Feb - they were fab!! For the choc icing, add about 6 tsp of coffee (when it has cooled) and a couple of drops of vanilla essence to cocoa powder, icing sugar, milk and butter. Works a treat!!!! My mum made big cakes and cut out cakes from this and then wrapped ribbon around. Looked amazing and tasted pretty good too

I wondered if any of you had any recipes for quick, delicious cupcakes please?
We have a surprise birthday party on Saturday and I have been asked (right at the last minute) to knock together some cupcakes for it. I have the basic ingredients (SR and plain flour, baking powder, vanilla essence, bicarb of soda, butter, sugar) but am having probs thinking of 'grown up' versions of cupcakes. I have a VERY limited budget for these cupcakes and ideally need to make about 4 different batches, (so nigella's cakes are out of the window!)

do you need an actual recipe or designs for decoration? What is the ocassion, age group etc?
My mum used to make choc chip ones but that might not be considered grown up enough0 -

Either Lidl or Aldi do a really cheap but amazing dark chocolate. (Can't remember which - my mum buys it for me).
Could you get a couple of bars, make up a basic buttercream icing (vanilla, butter, icing sugar), ice the cakes and drizzle some melted chocolate over each one?

I made cupcakes for my wedding in june, around about 120 of them. The basic cake i used was nigellas, but split half and did coco. I ended up using around 1kg of flour, the other quantities you can work out.
for the icing i made a white chocolate frosting which is firm but still nice and yummy. White choc melted, butter, double cream and icing sugar till it forms a thick but workable paste. Seperated these out to add different colours to match the theme of the wedding, topped each with an iced flower which i got from the cake shop for £1.20 for 20. They went down a treat.
Can provide the full recipie if you want, just PM me. Plus i did 2 caked for all people coming. Ended up with loads left over and having to bin some.Deliver us from email....0 -
what about coffee butterfly cakes - coffee sponge with coffee butter icing (or some chopped walnuts in them too). Also lemon ones? another of DH favs is cupcake with thin spread of jam and dipped is dessicated coconut.0

You can have chocolate ones, maybe mixing dark choc cake with white choc tops, lemon works very well too as shell said.
The kiddies can have dolly mixture ones like nigella does so well, I reckon the adults would love them too!
How about putting a tiny bit of jam in the centre and topping with vanilla buttercream-like a victoria sponge!
