A normal fairy cake recipe (the one I always do with the kids) is
4oz self raising flour
4oz caster sugar
4oz butter (or marg)
2 eggs
(I don't know the metric conversion, thats just so easy to remember 4,4,4 and 2!)
Cream together butter and sugar in a bowl, add an egg and a bit of flour and mix, then add the other egg and the rest of the flour and mix all together (or just bung it all in at the same time like I do and use a hand mixer or processor!)
Use two spoons to put the mixture into cake cases, one to scoop the mixture off the other spoon. Bake at 180 degrees for about 15 mins I think (I'm not sure of the actual timings because I know they are almost done when they start to smell nice) The top of the cake should spring back up when you press it then its done.
You can adjust recipe and add things like cherrys in or just add 3oz flour and 1oz cocoa instead if you want chocolate ones (I always add chocolate chips to these too).
You can make a basic icing with icing sugar, a touch of water and food colouring.

Hi all,
Ive been making lots of cupcakes recently and I really like to do the ones with thick frosting on top.
The recipe I use is:
Butter
Icing sugar
and 2tsp hot water
The problem is I really dont like it, it tastes too buttery.
Does anyone else have a recipe?0 -

it'll increase the cost a bit, but try unsalted butter, tastes less buttery and more creamy if you see what I mean?!

Gin and Tonic Cupcakes
Cake...
2 medium egg whites
pinch of sea salt
1/4 teaspoon cream of tartar
60g icing sugar (sifted)
35g plain white flour (sifted
1 1/2 tablespoons tonic water
Topping...
125g mascapone
1 tablespoon gin
2 teaspoons golden syrup
green food colouring
mini lemon jelly sweets
mini marshmallows
Preheat oven 150 degrees C/gas mark 3
Whisk egg whites in a large bowl with salt and cream of tartar till they are risen
Whisk in the sugar (couple of tablespoons at a time, sprinkling over the egg whites and whisking for 20 secs a time)
Fold the sifted flour into the meringue mix in three goes and then stir in the tonic water.
Arrange 20 mini muffin paper cases and two thirds fill with the mixture.
Bake cakes for about 10-15 minutes until lightly golden and springy to touch.
leave to cool.
Topping...
Spoon mascapone into bowl and beat in the gim... then the syrup and tint it the palest green with the colouring.
spread a little over each cake, spear in a lemon jelly and a marshmallow with a cocktail stick.
Gin can also be replaced with a variety of other spirits.
Eat and enjoy.

There is just the simple Glace Icing.
Icing sugar and warm water. 4oz sifted icing sugar to 15ml (1tsp) warm water.
Put icing sugar in a bowl add warm water, blend until smooth, add flavouring or colouring if desired. Use at once.

I find if it tastes too buttery I add more icing sugar till the buttery taste is replaced by a sugary taste..0

I sometimes use half philadelphia and half butter (2:1 icing to fat) and add a little bit of vanilla extract - tastes lovely!Jane

I can see loads of you are 'bakers' on here and wondered if you could point me in the right direction for cupcake tins. What I want is the ones that have steeper sides not open like bun/fairy cake tins - I hope you know what I mean.
I also want them at the best possible price (of course!)
This has all come about as DH bought me a lovely cheap book entitled 'cupcakes' for Christmas - I think it may be an influence coming from Aus as I see they sell fancy cupcake cases on Ebay
