    Rachel Allen has a recipe for it - I haven't tried it. From her description it's a slightly soft cake icing - suitable for a special occasion cake.

    You whisk egg whites over hot water until stiff, make a hot sugar syrup, pour that over the egg whites, then keep whisking until the icing is 'snow white, very thick and meringue-like'

    Sounds like Italian buttercream to me :D yummmmmm

    I need to make some cupcakes and I was wondering if they would last for four days. Also could anyone tell me what is the best way to store them? I just want to use buttercream, so am I right in thinking that they needn't be stored in the fridge? Any help would be appreciated. :mad:

    I would say that they would keep ok in an airtight tin. Sorry but cake has never lasted 4 days in our house so I wouldn't know whether they will keep that long. I tend to freeze un iced cup cakes in bags of 4 and then get a bag out at a time.

    Hi Cuddles

    I would love to keep them in my freezer but I just don't have the room. I need to make them four days in advance due to commitments. Will do what you suggested and try and keep them all in an airtight tin. Many thanks.

    In my experience they can last up to two weeks, you are correct, buttercream does not go off, just forms a little crust. And they should be fine if kept in an airtight tin or tupperware in a cool place out of direct sunlight (as if there is any!):) Made TONNES as kids and were rationed to one a day ;)

    Im making some cakes now for peoples birthdays on Friday and Saturday as round at BF's the rest of the week and he never lets me near the kitchen :rotfl:

    Best way to keep them:

    Make cupcakes and freeze them. Defrost when you need to decorate. If you don't want to freeze, keep undecorated in tupperware/tins.

    If you want to keep decorated, then make your buttercream with water not milk so it is stable at room temperature.

    Once decorated, keep in cardboard cake boxes or similar, and they'll sweat in tins or tupperware. The cake won't deteriorate as the buttercream should be covering the exposed surface and protect it from the air.

    Cupcakes are best eaten the day or day after they are decorated.

  • If you pop a sugar cube in the tin with them they will stay fresher and moist for at least a week
