    Yes, I froze them in big boxes and got them out the morning I wanted to ice them.

    I got a book recently on how to make/decorate cupcakes. They have some lovely ones, banoffee, coffee and praline, etc.

    I was hoping to bake some this weekend but don't have a muffing tray, is it possible to make them without this? I'm tempted to try and make them tonight but if it just isn't going to work then I'll have to wait until I can get the tray (my mum is giving me one when I see her at Xmas).

  • ive used a normal cake tray rather than a muffin tray and they turned out ok, but they werent the best when you compare them to being made in a muffin tray.

    Edit: Wait, what is a normal cake tray? I only have your average baking tray that I make oven chips in ;)

  • i think you're going to need a proper one with holes to sit them in - i tried to make buns the other day, just put them in cases on a flat tray, they all fell down and i ended up with a big square of cooked bun mix with cases embedded in it :(:( so i think they need the support of a muffin tray
