How big did you make then, did you use a muffin tray or a smaller bun tray? I can only suggest making them smaller especially if they're for very young children.0

I average 6 small buns per medium egg, so for 24 cakes, a 4 egg mix.
I assume that you are using self raising flour? Are you adding a little extra baking powder?

I have only started baking cakes in the last year or so and have since made loads of cup cakes.
I used the Nigella Lawson recipe and they are delicious - you don't need to ice the top if you don't want to.
The recipe makes 12 muffin sixe cakes, I would probably do double the quantities to what she says in the recipe to get 30 cakes.

I can second Nigellas cupcake recipe as relatively foolproof. I normally get 12 bun cases (rather than the larger muffin cases) from a 2 egg recipe. I would also make sure your oven is hot enough so they rise well and if they crack a bit on top bung some buttercream on!

I use 8oz SR flour, 8oz marj, 8oz sugar, 1tsp baking powder, 4 medium eggs and 2 tbsp milk. Mix this lot together and it will do 24 normal size bun cases. Bake at 180C for 20 minutes and voila! cup cake mountain ready to be iced! You can make chocolate buns by substituting 3oz SR flour for 3oz cocoa powder.

I would buy 2 cheap bun tins and some paper cases and make a 4-egg Victoria sponge recipe, then cook them in one batch. If you are planning to ice the buns, you can get away with slightly underfilling the cases - about 1 good teaspoon of mixture in each. I find that children like cherry buns - make up some white icing with icing sugar and water and top the buns with half a glace cherry each before it quite sets. Another simple one is a generous topping of cooking chocolate. Strangely, plain tastes better than milk. Or use up chocolate oranges. That gives me another idea - chocolate Krispie buns are easy and cheap - melt the chocolate in the microwave, stir in some Rice Krispies and spoon into bun cases. Sprinkle some sugar strands on top before they set. Children can help too. Make it an activity at the start of the party (needs helpers).0

That amount of ingredients should have made 12 cakes. Maybe you put too much mix in each paper case.0
