    Make up some icing as per icing sugar packet instructions, colouring or flavouring to your preference then just either put a dollop on top of each cake smoothing with the back of a warm spoon, or use your icing bag to pipe pretty dollops on top... decorate with anything you like, sprinkles, chocolate, pretty flowers, silver balls... enjoy!!

    You can either cover it in icing (just mix a little water or lemon juice, or rose water into icing sugar. You can also add colouring, you'll only need a drop or two. Then just spoon/drizzle it on) or you can make a butter icing. Can't remember the weights of icing sugar and butter, but google will tell you.
    Or, you can melt some chocolate and pour that over the top.

    Or cream cheese and/or marscapone cheese (with a bit of icing sugar) for a really rich topping like they do on the fancy cupcakes from department stores!

    proportions for simple butter icing are 4oz icing sugar and 2oz butter. Soften butter before you start adding the sugar!

    Put a tablespoonful of hot water in your buttercream icing and beat until it goes white and fluffy (electric mixer is best!), it tastes really creamy instead of "buttery" and stays soft.

    Sarah1 - I use my ordinary cake recipe.
    Weigh your eggs and use the same weight fat, SR flour and sugar.
    Cream fat (marg or butter) and sugar until pale and fluffy, beat in eggs - 1 at a time. Add flavouring - vanilla essence, orange zest etc
    Sieve in flour and gently fold until thoroughly mixed - or use a low speed on your electric mixer. If you want chocolate cupcakes, substitute a few tbsps of flour with cocoa.
    Dollop into paper cases and bake for approx 15 mins at gas Mark 5.
    How much you put into each case varies according to how much (if any) space you want left for icing.
