just to let you know that I finally used my weetabix minis and made the chocolate brownies, but not the cake (wiil do that next). Thanks to thriftlady I adapated the weetabix brownie recipe (added one or two more to take into account the weight of the fruit in the minis) and I cannot believe how lthe good they were... They disappared so fast that that that I did not have a chance to really taste them! Must be all the added fruit and nut in the weetabix minis. So OH is forgiven sort of for buying them :rotfl:

I've made 4 of these cakes today ( I've got 4 loaf tins that I use for bread ).
I put in 1 cup each of coconut, dried apricots, sunflower seeds and chocolate - so there was a quarter of cup of each in each cake instead of 1 cup of sultanas. Result - very nice
BTW I've frozen 3 of them0 -
I think I am going to give this a go! In another of OH's fads to find out his ideal breakfast, we have a small box of weetabix half eaten currently going to waste!! There is also 3/4 of a box of muesli going to waste, so any ideas will be appreciated!!

I've just made the weetabix cake, but used coconut as I had no dried fruit. I'ts absolutely lovely.
As for the museli, Ive used it in flapjacks & anzac biscuits & both were fine.

It is lovely
I used some mini Weetabix with nut and raisin that wasn't liked as cereal
It is like a bread cake. Very chewy, hard and filling
The smell was divine in the house whilst it cooked
We used half the sugar too and it was sweet enough
