SUCCESS! Made my first weetabix cake this morning and it's come out lovely! I substituted the sultanas for chocolate and that worked really well. OH and I had no idea how it would turn out, but we had a slice each when it was still warm and it's so scrummy! The chocolate keeps it moist and I'm sure would be lovely with some cream or custard!

Have just eaten a toasted slice of the cake which I made with a mixture of sultanas, chopped dried apricots and chopped hazelnuts with no mixed spice ( TBH I forgot to put it in! ). Nicest version I have tried yet ( I also did one with a banana mixed in but prefer this). I think any combination of fruit/nuts made up to the cupful instead of the sultanas would work well. Am thinking of a dried fig / date /walnut combination next....0

I made one today with mashed bananas instead of sugar - it was lovely (I say "was" as it has all gone!!)

I don't know whether you must put some kind of spice into the mix, but I used a teaspoon of cinnamon instead and that gave it a nice taste.Official DFW Nerd Club #20 :cool: Proud To Be Dealing With My Debts

Mixed spice can be bought from most supermarkets (asian as well!) I use loads.
As mentioned you can replace it with cinamon or as I did last night cinamon and ginger = )Tim0 -
I made it and it was delicious. Only thing was I think my oven is useless it needed 1 hr and 15 mins and after 45 mins at gas 3 I changed it to gas 4. Anyone else with a gas oven, how long did it take you?Penny xxx
