    It is supposed to be more like a loaf than a cake, so will be denser, but shouldn't be gooey. For a fan oven knock 20 degrees off the cooking temp to see if that works.
    We eat it with butter too, although DD likes it plain. I usually add coconut and reduce the sugar a bit.

    This recipe comes from Slimming World and is absolutely great to get things moving.

    4 oz All Bran
    2 eggs beaten
    1 oz cocoa or 6 heaped tsp drinking chocolate (if not slimming)
    sweetener to taste if slimming
    250 mls boiling water.

    Put all bran in bowl. Pour on water and mix. This breaks it down a bit. Then add cocoa, (hot choc mix) sweetener and mix in beaten eggs.

    Put in microwave plastic dish and microwave on full power for 6 minutes.

    This is best eaten hot with a little cream or ice cream.

    Just thought I would share this as it is so easy to make and you generally have the ingredients in if you need a chocolate fix. Also good as I said, to get things moving.

    How much coconut do you use? Think I'm going to give it one more try and this sounds yum :)

    I made this today and am really pleased with it .Thanks OP....has anyone modified the choc brownie recipe so it is eggless????

    I just use half a cup of sultanas and half a cup of coconut (roughly), and it turns out pretty good every time:D

    Hi, I'm chuffed that this thread is still going but its a shame that some people have had problems with the cake and I have had it abit soft in the middle sometimes too, try turing the oven down abit and cooking it longer, I have yet to burn a weetabix cake!

    Just made this, it's in the oven as I type.

    Does it rise much? I used quite a big mug and the loaf tin was fairly full :o
  • hi i made this yesterday it was great. I had already bought a measuring cup and i converted the temp to 160 but i have a fast fan oven so did it at 140 for 45 mins and it was yummy thanks!!

    :j Have made a weetabix cake today and it's nearly all gone already:mad:

    Can you freeze them after they have been cooked, thought I would make some more , slice up, wrap and freeze for lunch boxes.

    I have never froze it Busy mum, but thats only cos it never lasts long enough!
