OH bought fresh cranberries on Saturday, only to find out that you cannot eat them. So I looked aound the OS site and read that you can use cranberries in any recipe just like raisins.
Great, I thought, I make the weetabix cake with cranberries.
Well, the cake turned out lovely again, but the cranberries are still EXTREMEMY sour. What did I do wrongHe who asks is a fool for five minutes, but he who does not ask remains a fool forever.

I've just put a weetabix cake in the oven and it does smell nice. I had run out of sultanas so used dried cranberries which I think are a lot sweeter than the fresh ones.Our days are happier when we give people a bit of our heart rather than a piece of our mind.

I have just made my first Weetabix cake and it is yummy.
It smelled gorgeous while it was cooking and I couldn't wait for it to cool properly,so I have just eaten 2 slices slightly warm with butter on.
It is so easy to make and healthy too if you spread the butter thinly.
I shall pass the recipe on to some friends who are both watching their diets for health reasons,I'm sure they will love it.0 -
Does anybody have any idea how long this will last - I want to make it today for daughter to take into school on Friday (school bazaar on Friday).

Ours usually gets eaten within 24 hours so I'm not sure how long it would stay fresh for but I would guess at about 3 days.

Last night while cleaning out my baking cupboard, I sniffed the mixed spice and that was it - I had to make a weetabix cake! Trouble was I didn't have any dried fruit so I went to Morrisons today and they didn't have a single bag of sultanas! Got some in the end from somewhere else and it smells lovely in the oven now Mmmmm

sounds great - and i have all the ingredients - except sultanas, but will use mixed fruit I think. great gives me somthing to do rather than sit on pc all night. will let you know how it turns out...Proud to be dealing with my debts
