Only put in two teaspoons of coffee and i think it could do with a little more for my liking, and my icing was a bit of a failure but tastes nice. Tried icing sugar, a little coffee essence and afew drops of water. Should I have used a bit of marge or am i thinking wrong altogether?
Ah well i LOVE coffee cake so am prepared to keep going til its perfection! lol

Cake was wicked! It was nicest warm so I had it toasted the next day. Best bit was the crusty bit on the outside IMHO. Yummy Yummy! Going to try making the brownies for baby number two's birthday tea on Sunday.

Thank you choccyface2006, thanks to you I made my first cake this week since 1982 . Then I wanted to be a 'proper' housewife who would cook and bake etc... Ha! I gave up pretty quickly.
And now I finally made a cake that turned out allright :T can't wait to try out some different versions.
Just one BIG questions: just managed to lose some weight, how do I keep that down NOW:question:He who asks is a fool for five minutes, but he who does not ask remains a fool forever.

I make the weetabix cake without the sugar as there is ample in the weetabix itself. This will make it a healthier option for those watching the pounds. I sometimes add a tbsp or two of molasses to make it more like malt loaf.
I def. agree that you have to spread it with butter tho' (which kind of defeats the object) but if the butter is softened you don't have to spread it so thick.0 -
nice with the new oatabix too - for those who can't have wheat0

Perhaps someone can advise?
Would love to bake a weetabix cake this evening, as it's especially good. Problem is the fan heating element in my oven is kaputt! Can I use any other settings on the oven to successfully bake a cake?0 -
Here's my own recipe:
Malt Loaf Recipe
Preheat oven to gas mark 4. Put 3 weetabix, 4oz sugar and 40z of raisins or sultanas in a mixing bowl and add 1 mug of hot black tea. Leave to soak until the mixture has gone cold. Stir and add in 2 eggs. Stir again and add in 4oz self raising flour and 2oz porridge oats (optional but if not using oats substitute for 2 more ounces of flour). Mix thoroughly and add to a loaf tin and bake in the oven.2008 Comping ChallengeWon so far - £3010 Needed - £230Debt free since Oct 20040 -
Will yours work as a conventional oven? ie without the fan.
I prefer to cook cakes in my non fan oven. I just increase the temperature by 10 degrees.£2 Coins Savings Club 2012 is £4.............................NCFC member No: 00005.........

I don't have a fan oven so I would just do it on gas mark 5 and see what happens. Check it at regular intervals.2008 Comping ChallengeWon so far - £3010 Needed - £230Debt free since Oct 20040
