  • Help me! I have NEVER made a cake without a packet before. My weetabix cake looked and smelled lovely in the oven but now the time is up i've popped in a knife to check and there's still goo in there. Am gonna give it another ten minutes. Does this sound right?

  • Thank god for that. Well the 10 minutes is up and there's no obvious cake goo on the knife if i poke one in now. Don't want to slice it til hubby comes out as its a suprise (like I said i have never made a cake and he may faint!). Keep your fingers crossed for me

    have made loads of the weetabix cakes but today added blackberries instead of dried fruit - wow- wee - try it and see - can't get cheaper than blackberries at the moment !!

    I really fancy a coffe and walnut version. Am guessing swap the cup of sultanas for a cup of walnuts, but for the coffee flavour. Swap some of the milk for camp coffee essence i'm guessing, but how much? Anyone else tried a coffee version yet or if not do you think it'll work? Would hate to make a yucky waste

    Think I will try this tommorow am really looking forward to it after all these raves! Any other low fat cakies? Am on a low fat diet at the moment - trying to lose the jelly belly after having two children!

    This weetabix cake is becoming famous LOL, my in laws tried some of mine the other day and they loved it and have asked me to make some for them, and my FIL is a chef so i was really flattered.

    Plus my OH loves it so much he has been raving at work about it and now they want to try some.

    I think I fancy trying that too... I'd just go one step easier and mix the coffee granules in the warm milk... a couple of teaspoons should do it. Would be nice with some coffee icing too.

    Think I'm going to attempt a carrot version very shortly, just swapping some sultanas for grated carrot and seeing what happens.

    OK have gone for the coffee granules option and its in the oven now, so will report back with the results later. And yes icing is a must for a coffee cake!

    So, you try the carrot one and i can have that tomorrow coz there'll be no coffee left lol
