    Frozen foods remain safe indefinitely.

This is true ;) However, fats will continue to deteriorate, so fatty food (such as meat) shouldn't be kept for ages. It'll still be safe to eat, but the eating quality may not be the best.

Spinach - warm with some ricotta, fried onion and garlic, cream and parmesan, season with pepper and nutmeg, and serve with pasta.

Just popping in for a look and it sounds like you guys are doing great!

I have managed to make some space too, so made a double batch of muffins and a fruit loaf and wrapped and froze ready for school/ work lunches lol. I just can't help myself

Still in my meal plan this week I am using up some sausages, pork, chicken, snitzel and some random pies. So that will make more space.

And I stewed up all my apple cores (when I cut them out of apples for my son I freeze em) and that made a bit of space too, bag was getting quite large haha. In a way they went back in though, since I used some of the apple sauce in place of butter in the muffins haha. :o

Take one pork tenderloin (I find one does 2 people as DH loves it - it could be stretched to 3 or 4 if it's a large one) and cut into about 1 1/2 cm thick slices. Take an onion and chop up.
Melt a knob of butter in a frying pan with a little oil to stop the butter burning. First fry the onions in the pan till they are glassy. Remove from the pan and then seal the pork tenderloin - make sure they are browning - you need to release the sugars in the meat to get loands of flavours.

Once the meat is nicely browned put them in an oven proof dish and put the onions over. Pour in the cider so it covers the meat.
Place in a hot oven (I stick it on 190-200c) and leave to bubble away for at least 30 mins - 45 would be fine too.

Serve with rice - I use a wild and normal rice mix (by putting the wild rice in about 5 mins before the normal long grain rice) and it works really well with this dish!

This thread definately needs ressurecting! Is everyone on holiday? :D

I feel the need to do my own storecupboard challenge. I have a freezer full of stuff, which I will list this weekend, together with a cupboard full. Now, I live on my own, so there really is no excuse for all the hoarding - I could probably live for a couple of months on what I have in! So, aside from buying milk and butter and eggs, I propose to go as long as I can on what I have in!

So, when I have posted the contents of my kitchen (!) I would be grateful for assistance and recipe ideas from all you kind clever folk out there! See how many NSD's I can get in a month!!

    Who's with me? :undecided
