    Im having one of my surprise tupperware containers tonight:rotfl: As is starts to defrost I think I can spot a prawn which is quite good news - at least its something savoury:D

    Note to self - Always label freezer meals:cool:

    Mrs T have you got a slow cooker? maybe the turkey thigh will be better cooked really low and slow.:confused: found this for some inspiration

    I used to... until last weekend - it broked! This is the second one that's keeled over and died and in less that 2 years and not THAT much use I'm just not going to bother getting another one I think... I have the worlds tiniest kitchen and it takes up SO much room!
    So think I'll just use the casserole dish I got for the wedding when I really need to slow cook anything and stick it in the oven for a while or use our tagine...
    I think this turkey thigh joint is looking more and more likely to end up in the bin...
    Just hate wasting it... Suppose I could feed it to the dog but she CAN be fussy and would hate to waste time cooking up all up for her to turn her nose up at it :rolleyes:

    Right the paella turned into Jambalaya but was delishious none the less - followed by apple and blackberry crumble - it all went down a storm!
    Throwing out left over jambalaya as not fond of reheated seafood (I'm paranoid!) which is a shame but at least I know it's easy to make so can be repeated another time! :)

    Mmmmm now what to have tonight - must be VERY easy to cook as have monster headache from hell today (consumed a fair whack of red wine last night DOH!) and was up at 3am feeling unwell (no not THAT unwell) and very hung over... just about feeling human now but not going to be standing cooking for ages today it has to be said...

    Maybe pork tenderloin in cider with rice... yeah that's fairly easy... Need to buy more apples though hmmm

    just a few recipes for using up soft fruit from the freezer.

    muffins makes shed loads (can use any soft fruit)
    230g unsalted butter
    230g caster sugar
    4 eggs
    230g sr flour
    230g of berries.

    preheat oven to gas mark 4
    cream butter and sugar until fluffy
    add eggs one by one
    fold in flour
    add fruit

    half fill cases with mixture and put in the oven for approx 25 mins or until golden brown.

    blackberry oat bars
    makes 12
    225g plain flour
    200g porridge oats
    250g chilled butter
    100g chopped pecans (optional)
    300g blackberries

    preheat oven to gas mark 5
    line a shallow cake tin with baking paper
    flour and oats in lg bowl
    cut butter into pieces and rub in with fingers
    stir in sugar and nuts
    spread 2/3 mix in the tin and press down
    add backberries
    top off with the rest of the mix
    cook for 45 mins
    cut into slices while hot but only take out of tin when cold

    I had that mystery tupperware containter last night and despite thinking I had spotted a prawn - I was wrong it was a carrot:D so I ended up having a very thick pea and ham soup with a nan bread:rotfl: I love this freezer mystery stuff:rolleyes:

    anyway for tonight I had got out a lamb shank in balsamic gravy and some broccoli but had a text a couple of hours ago inviting me to a slap up roast beef dinner next door....i said no no no no yes please:T Have thrown together a rhubarb and apple crumble to take so the lamb shank will have to be tomorrow now.

    Enjoy the pork tendersloin Mrs T that sounds like good wholesome hangover food.

    How long is it safe to keep things for in the freezer? I came across some bread the other day that was best before Oct 06.. am I being optimistic to think that this might still be OK?
    Also, does anyone have any suggestions for defrosting frozen mash? It always comes out either tough, or slimy. Ugh!

    Hmmm I'm sure there is a site around with how long foods keep for in the freezer... I'll go have a look.
    As for defrosting mash - have you tried microwaving from frozen?

    That's reassuring! I'll dig that loaf of bread out someday soon then :)

    Tried microwaving mash from frozen - that resulted in the sliminess! heating it in the oven seems to make it go really tough. Shallow frying it is OK, but not very healthy!

    Well we're slowly but surely making inroads into the Freezer!
    Just trying to decide on what to take out for tonights dinner now... hmmmm
    Think I might take out the mystery mince and just work from there tonight when I get home... that way I HAVE to work with what I have as I can't stop off on the way and pick up anything extra :rotfl:
