Blackberries make great muffins - just add them still frozen to the batter, and cook immediately.
Penny. x
Well it is the credit crunch pen pen - needs must:D :rotfl:0 -
do you have a large freezer .. cause it sounds massive.
i think you should hold a sale you could make a little bit of cash with all that frozen food
Nope... I have a fridgefreezer and ALL that stuff is in 2 1/2 drawers!!! Amazing isn't it???
Oh AND I actually chucked a few bits out that frankly I can't remember when went in the freezer so thought it safer to dispose of them :S

I've got a partially filled f/freezer in the garage & another freezer in the kitchen. After reading these posts, I had a look through & discovered at least a dozen boxes of rosehips, bag each of blackberries & raspberries, & loads of real oddments! This year's rosehips will soon be ready & my brambles & others in the village look like we're having a mega harvest, so will have to do rosehip syrup asap to clear space for new brambles!
Also looks like we'll be having some very strange meals in order to use up stuff - real economic crisis this month - so salmon for 1, b/burgers for 2 & chicken legs for 1, plus asstd veg to start off.
Just found 3 ice cube trays filled with h/made chicken stock as well - soup tomorrow maybe?

What kind of salmon is it cheapskate? DH does a delishious salmon and cream pasta which really stretches the smoked salmon - I don't know if it would work with normal Salmon though...
I might have a look for rosehips this autumn - didn't notice any last year but wasn't looking. Come to think of it some of the blueberries might be sloes... I need to have another look later!DFW Nerd #025DFW no more! Officially debt free 2017 - now joining the MFW's!

Cheapskate - can you please post your recipe for Rose Hip syrup. I tried making it once and it turned out a complete disaster, which is a shame because I wasted a lot of painstakingly collected rose hips. (Do you use the big ones or the small ones?)0

Mrs Tine - it's just a couple of salmon fillets - got an elderly lime to use, so will just use zest & juice mixed with a bit of olive oil, dash of spicy sauce like piri-piri or Tabasco, salt & wrap in foil to go in oven. It's nice with lots of different veg, have served with rice, pasta or spuds.
Primrose - when I made it before, I asked my mum, cos she used to make it when we were kids. It's simply putting the rosehips in a big pan, stock pot or similar (more than one if necessary), add plenty of boiling water, some sugar (not as much as jam, so maybe 6 to 8 ounces of sugar per pound of hips), then simmer until soft. Check in case you have to add more water - my first lot took hours to scrape off the bottom of the pan! When it's cooled down, strain it through muslin to remove hairs, squashing the cooked hips, taste & add more sugar if needed. I simmer it again to reduce it, then it's like proper syrup & you can dilute it, or use neat in fruit salad or on icecream. Keep in bottles in cool dark place, fridge once opened. My roses have gone wild, so the flowers & hips have more fragrance than standard roses, but experiment as I think most hips taste better than their roses smell, if that makes sense!
Tons of vit c in it & taste takes me back to my childhood - like all the blackberries - my mum was really inventive with free food!July 2024 GC £0.00/£400
