  • I made an interesting dinner last night as I had no inspiration and went rooting for ideas. I opened a jar of thai green curry paste (BBD 10 2010) and Fish sauce (BBD 06 2008!), with a tin of coconut milk (not as bad, as I DO use those - 2011 sometime). 2 chicken breasts from freezer, along with a handful each of HG peas and broad beans. Half each of a HG red onion, courgette and patty pan squash (all fresh). Cooked together and served with rice. Not half bad!! Especially as it was all from stores!!

  • Empty Freezer (as much as possible) Challenge - Defrost Tues 28th Sept

    2 chicken breasts gone from the freezer for last nights tea.

    1 portion of tomato sauce and some seafood out for tonights pasta dish.

    Must bring portion of pasta bake for lunch tomorrow.

    Going to transfer mini springrolls (about 30 of them) to a bag so they take up less space.

    Small Chest Freezer is starting to look a bit more empty, fingers crossed I get it run down enough to fit the remains in the fridge freezer on Tuesday so I can defrost it (then transfer anything back and defrost the fridge freezer on Wednesday!)

    Moved the sausage casserole and bake to Friday and Saturday as i do not have a casserole dish and might have to use the remaining money to buy one. Unless a similar meal can be cooked on the hob? As you can tell i'm a complete amature at cooking :o

    You can do a sausage casserole on the hob if you've got a big saucepan with a lid - just turn the heat down low when all the ingredients are in, and keep an eye on it to make sure it isn't sticking to the base of the pan or getting too dry. I've done sausage casseroles this way before, so I know it definitely works. :) I'm not sure about the bake - it might work, but I think it would be better in the oven as you get a crispy topping that way. :drool: Do you have any oven-proof dishes that you could use, rather than going out to buy one specially?

    I was out all day yesterday but managed to use up a portion of smoked salmon for a luxury breakfast before I went out. :D I haven't put anything new in the freezer for nearly a week now, which must be a record for me. :o

    you don't need to use a casserole dish , i normally use a roasting tray. works at just as well.

    I think most of our weekly food shop went on snacks tbh so i've been looking at different ideas for home baking. Also my OH has just decided he wants to be healthy!! Coming from the man who drinks a 2lt bottle of pepsi every day :O (no wonder our food shopping is high!) Well he's been drinking 2lt of water instead now for 3 days and is complaining he's tired. I hope he sticks it out as it'll benefit him in the long run!

    LO only drinks diluting juice and milk
    I drink mainly water and the odd cup of tea (i mean odd as in about twice a year!)

    We're getting there anyway! If it wasn't for being cut short this week we would have continued to buy junk in i'm sure!

    But i'm proud to say we're going to stick to eating healthier and saving money in the process!

    I''ve done a freezer and pantry inventory. I've then planned meals for each item that needs using, and put it all into a spreadsheet meal planner :)

    Me and OH dirnk milk in our tea/coffee, our boys drink tons of milk and more in cereal. But they also drink diluted juice and water.So its works out quite well. Really chuffed for your OH, lets hope he's carrys on with the water!

    Well i need to figure something out for tea. No doubt something hot as its freezing here. So maybe some kind of curry, calzone or stew.Its all in the freezer so just a matter of defrosting it.
