  • Please give me some inspiration for dinner. I have piedmont peppers (without anchovies) and corn on the cob I want to eat (I know-weird combo), but figure I need some protein too-any ideas anyone?
    Thanks

  • Thanks :D thats what I was thinking. have ended up getting a bit of spiced pork shoulder to make pulled pork (I can never resist the reduced stuff in waitrose!) , will have some of that with BBQ sauce, yum with the corn on the cob, the peppers can be my weird thing on the side lol, could always make them spicy with addition of chilli. I think if I had steak when my OH was at work he might kill me!

I sort of cheat to be honest-the pork comes ready spiced from waitrose and I just roast it really slowly, then shred with forks. I love it in tacos, when I mix it with slow fried onions and peppers with lots of cumin and chilli, or just in a sandwich yum yum yum. The joint from waitrose comes with a sachet of BBQ sauce, which I don't tend to use.

I did once do it myself with a bit of pork shoulder, I used a recipe like this but I can't actually find the original one (I have WAYYY too many food blogs bookmarked!)

I'd leave it out if you have no tomato puree ;)

As this has fallen from the front page of OS, I'll add it to the Storecupboard Challenge to keep ideas together.

It's probably a bit late now, but I often bulk out sausage casseroles with tinned beans (plain ones rather than ones in tomato sauce). As they're already cooked, I guess you'd need to add them near the end of cooking to heat through, as they might turn to mush if you slow cook them (I don't have a slow cooker so I'm guessing here).

You could add a little bit of sugar if the tinned toms are a bit bitter / sour, but it shouldn't be essential otherwise.

Over the past couple of days I've used up: a tin of mackerel that's been in the cupboard for longer than I can remember (:o); a pork chop; one portion of sweetcorn fritters. One loaf of garlic bread has gone into the freezer as I wasn't going to get round to eating it before it went off.

It's not great, but I am getting there!
Back after a very long break!
