Lunch:
me-rice with spicy tomato & mushroom sauce
OH- cheese with bread (that he baked)
Dinner:
we made a spicy & creamy crab tomato sauce, from tin of crab, passata, bit of cream cheese, garlic & onions. I had it with rice and OH with orzo.
Fridge is nearly empty, but have to use up 1/4 cucumber, 4 mini tomatoes & half a bag of runner beans, which I am desperate to use up, as we are away for three days from tomorrow... does anyone have any idea how to use them up, preferably suitable for a packed lunch?0 -
everything today came from pantry
rice pudding at lunchtime w/protein poder
tea : quorn/black eye beans/tomato little casserole
gonna chuck the leftovers in the freezer

Hi, how about a fritatta or spanish omeleette type thing? Delicious hot or cold and really easy to make. Or you could make a rice salad? could also throw in dried fruit or nuts if you have any?
In case you don't know how - mix say 3 eggs or 4.Mix, not overly, just so yellow and white mix . In frying pan, put some oil or butter and fry up veg for few mins - with onion or garlic if you have? Depends on tastes. Add egg and what ever herbs spices , s&p. Cook until it sets on the bottom, top with cheese and pop under the grill. Slice. Eat.A little nonsense now and then is relished by the wisest men :cool:

I can't do egg things when cooking for both of us as OH hates eggs... it's one of the very few things I haven't been able to change his mind on :rolleyes:

Well my fridge, freezer & cupboard are heaving, so I'm going to make a list today of what's in, post it on the front of the appliance/cupboard and try to make some meals up. My problem is lack of enthusiasm when I get it from work at 3.30-4pm or thinking "I'll make that" and then realising if I do, then we won't be eating until about 8pmCreeping back in for accountability after falling off the wagon in 2016.Need to get back to old style in modern ways, watching the pennies and getting stuff done!0

I have used up some salmon fillets from the freezer last night for tea (they were a complete bargain: reduced from £8 to £2) and I roasted them in some honey, balsamic and olive oil. Also used up some rice from the cupboard and some odd mushrooms, onions, peas and some chopped up basics bacon to make savoury rice.
I will not be cooking tonight as Dh is working late and he will pick something up on his way home.

Used up 2 more HM Ready Meals last night by having Cottage Pie instead of making fish pie.
If I'd made the fish pie I probably would have ended up freezing the remaining portions. So a quick shufty round on the menu plan this week is in order to see what else I can use up. We do this more than once a week.. Most nights in fact.. We simplay cant afford to buy food all the time so we have to basically eat beans every night.0

Yesterday I used up half a butternut squash and some cheese in a risotto (used up stock and rice)
Today used up half a tin of sausage and beans (other half will be with a jacket potato and cheese for an evening meal)
Tonight will eat up the rest of the risotto and frozen peas
Tomorrow will eat up something for lunch (soup or rice) and maybe try the salmon fillet suggested above by mollythewestie or use it up in some kind of fish pie concoction. I bought some frozen fillets from Mr T which are minging and need disguising
