Have you got the recipe wiv the lentils in hun?I don't do soya mincecandygirl - I missed the start of the veggie chilli conversation, but I never use soya mince in mine - I just throw in a few handfuls of red lentils at the same time the liquid (stock / tomatoes) goes in, and it always turns out beautifully - nicer than meat chilli, actually (and I don't often say that about veggie meals - I'm a hopelessly devoted carnivore!
)
Candy... I do what CCP does... just chuck in a handful or two of red lentils, when I add my tinned tomatoes.
It really thickens up the sauce and is yummy.
I dont really have a definitive veggie chilli recipe.... as I tend to use up what needs using up, in the fridge to make it0 -

Just to add that there are a few coeliacs/wheat intolerant people around (myself included) so do shout if you need some help or support. It's a hard tranisition, but 2 years down the line I am SO much better than I was so it's certainly worth making the effort with what you're eating.0

Thanks Little Vics, I've only been wheat free for 2 months, so I'm still finding my way around the free-from isles at supermarkets. I agree with you tho, it's totally worth making the effort, I feel so much better!

yup - OH is fine. However, we made a decision to eat food that didn't include wheat rather than find substitutes as most of them suck!! So lots of rice and potato based dishes for dinner. He gets his bread fix at lunchtime. The only compromise we have is Tesco Whole Foods Spelt pasta - it's yummy and I can tolerate a small amount.0

Bacon/spud/onion/cheese thingy is now in the oven. I crumbled some of the stale Carrs Melts over the top to see if they will give a breadcrumby sort of effect with the cheese. Hope it isn't yuk. It smells very nice though!
There was lots of bacon in the pack so I've put some of the onion/bacon mix aside and will use it in a sort of fried rice thing to use up my bag of frozen white rice. I got the frozen rice for 1c but just never fancied it as I always use brown rice nowadays - it just looks so bland and boring. I wonder would the bacon and onion freeze ok? I've got it in an old takeaway container in the fridge at the mo.
ETA: Dinner was yummy if I say so myself - real comfort food! Will definitely make this again.Trying to spend less time on MSE so I can get more done ... it's not going great so far!

So today:
Lunch - mushroom & sun dried tomato risotto with basmati rice.
Dinner - Mung bean soup - mung bean, tomatoes, ginger, garlic, onions, chilli & spices.
Little Vics - I feel the same too, I eat rice, but some times, I could just really do with a pasta dish! Thank goodness for gluten free pasta, they're expensive, but makes a great treat for me.0 -
Hi, I'm in a similar situation trying to use up what I've got and save money. I'd love a pantry - lucky you! And yours sounds like it's a lot more exotic than my store cupboard. All those different noodles sound lovely even if you can't eat them. Good luck with your challenge.Trying to spend less time on MSE so I can get more done ... it's not going great so far!

Hi NualaBuala, I used to dream for a pantry before we bought this house, now I've realised it's a mary poppin's bag for food to go and hide! Making a list of what we have has really helped though, so glad I did it. You are more than welcome to all the noodles that I can no longer eat0
