    • Frozen smoked salmon from xmas
    • Frozen peas (1 cup)
    • Frozen broad beans (1 cup)
    • Rice (1 cup)
    • Grated raw beetroot (grown on my window ledge)
    The first place I'd usually go with smoked salmon is a bagel or even a pasta dish with cream. However none available so I raided the freezer!

    Boil the rice for 10 mins in plenty of water > drain > add frozen peas/broad beans to the same pan with hot water from the kettle > put the now drained rice still in its little colander (mine fits neatly over the pan) over the pan and cover with foil (this is how to get fluffy rice) on a low heat. (Also your only using one pan hob which is good for moneysaving on gas and time saving on washing :cool:) > give it 10 mins then turn off the heat and mix the drained greens with the rice and allow to cool > make a dressing of honey, olive oil, black pepper and lemon juice and add to rice mix > grate in raw beetroot and place the smoked salmon on top with little twirls = lovely cold smoked salmon rice salad.

    firsttime posting on this thread. Just finished first GC and I am also attempting store cupboard challenge this month. Found all sorts when I emptied cupboards and completed inventory. Found bottle of oil infused with garlic and rosemary. Didn't even know I had it but last night I cut potatoes into small cubes, tossed them in afore mentioned oil and cooked them in oven at same time as chicken pieces. They were delicious and I certainly will have no problem using up the rest of the oil during this month. Looking forward to trying out new recipes and using up things that have been lurking in the back of the cupboards and freezer.

    Happy New Year to everyone here

    I've done my shopping as part of Jan Grocery Challenge and have worked out this will last me a minimum of 14 days and I think it will last another 7 days after that with only milk/fruit/bit of veg to buy at the most:confused:

    Here we go with the storecupboard challenge for me for 14-21 days! Lets see how long I can last!!!!:rotfl:

    I bring the challenge on to me to stop me buying food frivolously and none stop. I pledge myself to the challenge and stick to my meal plans for the next 14 days and then plan another 7 with what is left.

    Off we go on another challenge to help me change my spending habits, thanks to all for the support on this thread and the ideas for meals are great too!:T

    yesterday I made toad int he hole with sausages from the freezer and other ingredients from storecupboard. Potatoes, broccoli and 1/2 cauliflower. Leftover trifle for pudding. Breakfast (OH only. I have toast) today was sausages I didn't use last night, fried potatoes and eggs. Tonight is the rest of the gammon, baked potatoes, tomatoes and pickles. Everything in store so nothing to buy. The other 1/2 of the cauli I will use to make a cauliflower cheese tomorrow as I have plenty of cheese in fridge.

    Had the last of the Christmas pud and cream for pudding tonight.
    Mortgage and Debt free but need to increase savings pot. :think:

    right i went through my cupboards and freezer and after throwing out alot of off stuff :o i was left with random items i havent got a clue what to do with and wondered if you lovelys could help me ... so heres the list:
    country soup mix
    6 tins of chop tomatoes
    bag of frozen chickpeas
    bag of frozen kindey beans
    box of frozen sliced fresh peppers
    lots of stock
    mixed herds
    ground mixed spice
    ground cinimmon
    suet
    think thats about it:p ... any ideas? x

    Hi there!

    I've just throw a pile of carrots and potatoes in the slow cooker with kidney beans, chickpeas, pulses (use some of the country soup mix) and toms, stock, herbs and harissa - will serve it tonight with couscous.

    The soup mix can easily be turned into soup! Add a couple of onions, a couple of potatoes and any old veg that needs using up, throw in the soup mix, a stock cube, water and cook for a couple of hours, or pop in a slow cooker. Serve chunky or blitz with the blender. Makes a really filling meal with crusty bread.

    Chickpeas can be pureed or mashed with onion, garlic, a bit of oil and turned into hummous, add tahini paste or fresh coriander if you have it as well, but it isn't necessary.

    Kidney beans can also be blitzed and used as a spread or dip, flavoured with garlic and herbs, onion and a bit of oil.

    The peppers could be cooked slowly with tomatoes and served as a sort of ratatouille, or cook the peppers and toms in a frying pan, add chilli, make four wells and crack in some eggs, put a lid on the pan and cook until the eggs are set - or you can stir the eggs in so they are sort of scrambled. This is a breakfast dish, can't remember it's name though, but I've eaten it in North Africa, Spain and South America!

    Suet, make some dumplings according to the recipe on the pack, flavour with some of the herbs and serve with the stew above! Or make up as per the dumpling mix and roll out and use as a pastry style topping for a pie, the underneath tastes like dumplings and the top goes nice and crispy like pastry! Great with a meat and gravy pie - sort of like a cuttable stew then!

    Mixed spice and cinnamon can be added to muffins or biscuits, gives them a lovely Easter sort of flavour.

    Cinnamon can also be mixed with mashed banana, spread on toast and flashed under the grill as a yummy snack! Smells lovely too!

    The stew, soup, hummous, kidney bean paste and any muffins or biscuits can all be frozen if you make too many or too much, or want to stock your freezer.

    Hi searching me,

    You can cook it slowly on the hob or in a casserole dish (covered) in the oven.

    I'll add your thread to the Store cupboard challenge to see if the regulars there have any more ideas.

    What do you reckon.. How many months can i survive just needing milk, eggs and salad oh and a bit of cheese..

    Havent inventorised the fridge but have a fair amount of cheese a few eggs.. 10 tubs of butter which was half price last week and salad and a few veggies.. Hubby bought a sack of potatoes last month so they will last till the end of the month too..
